Add the ground beef or turkey into the pan with ½ of the diced white onions and taco seasoning. Cook 8-10 minutes.
Finely chop: bell peppers, onion, cilantro, and crumble the cotija cheese.
Cook the microwavable pouch of Spanish rice according to bag instructions.
Add lettuce to the bottom of the bowl followed by laters of beef, rice, and beans.
Then add tomatoes, peppers, onions, jalapeño, cilantro, and any other taco veggies of choice.
Top salad with queso and salsa as the dressing. Add sliced avocado. Serve as a salad or with chips as a 7 layer dip!
