About this Guacamole
Lately I've been seeing people add fruit to their avocado toast. I've seen strawberries, tropical mangoes, and POMEGRANATE. I love the idea of a juicy, sweet fruit paired with creamy, ripe avocados — so this healthy guacamole recipe was born.
This delicious Pomegranate Guacamole is a delightful blend of creamy avocado and juicy pomegranate seeds. The best way to jazz up traditional guacamole? Add a twist into it! Light, citrusy and tangy, it might go so fast that you'll miss your own chance to dip a chip!
Perfect on its own, add onto tacos or burgers, or on salad. It pairs really well with this Cilantro Lime Rice recipe and with the pomegranate addition, it's festive and wonderful for holiday season, too!

Recipe Ingredients
- Avocados: Nothing beats a ripe, creamy avocado. It’s so satisfying to cut one open and be greeted by its rich, vibrant green. Avocados are great healthy fats, have a ton of fiber, and can help lower cholesterol.
- Tomatoes: These will add more color to the guac. I suggest cherry tomatoes as opposed to something like a large beef steak, which'll have more moisture and potentially leave your salsa a little soggy. You can also use salsa - you'll lose the pop of color from the tomatoes but it's tasty
- Red Onion: Adds a quick, sharp bite to our creamy spread.
- Cilantro: I love fresh cilantro, but I know many don’t. Feel free to leave it out, but the brightness it adds is ahhhhmazing.
- Pomegranate: A salsa ingredient you HAVE to try. The texture and pop of color these bring to the tasty dip is so unique, I know you'll love it. Plus, it brings high levels of antioxidants into a dish that normally lacks them!

Substitutions and Variations
This recipe is fairly simple, but feel free to change it up with your favorite ingredients and I encourage you to get creative! Here's some other ideas to switch up your guac:
- Add a different fruit like mango or strawberries for more sweetness. Sometimes, I even like to add some balsamic dressing to bring out those fruity flavors further.
- Add cheese! Some great options include feta cheese, coat cheese, copper kettle cheese or shredded parmesan.
- Give it a spicier kick with extra jalapeños, red pepper flakes, or your favorite hot sauce.
How to Make This Recipe
1. First prepare your produce: Finely dice a small red onion, cilantro, jalapeño and tomatoes. Remove the pomegranate seeds from the peel. Slice avocados in half and scoop out the inside flesh.
2. Add the avocados, lime juice, and seasoning into a large bowl. Mash avocados together using a large fork or potato masher. If you like a chunkier guac, do less mashing.
3. Pour in the guacamole fixings: tomatoes, onions, pomegranate, and cilantro. Stir together. Give it a taste test and add more kosher salt or lime juice if necessary.
4. Squeeze fresh lime juice over top, garnish with fresh pomegranate seeds, and a pinch of salt. Add the fresh guacamole to a serving bowl. Serve fresh or in a fun way, like on a pile of tortilla chips!
Recipe FAQs
Guacamole is best served fresh because (although still perfectly edible), the avocados will brown quickly - within just a few hours if left out. My tip to keep the guac from browning, is to place it in a Tupperware with plastic wrap directly against the surface of the guacamole inside the Tupperware and then placing the lid on top. You’re essentially trying to limit the amount of air that gets to the guacamole, so if you have a good sized container you can fill and the lid actually touches the top of the guac, that would work too.
For a ready-to-use, ripe fruit, you want to pick an avocado that is dark (but without spots) and has slight give when you apply pressure. You also can use the "flick the stem" method. Give a flick or light twist to the little stem piece on the top of the avocado. If it comes off fairly easily, the avocado is ready to use.
- Start by cutting off the crown of the pomegranate using a knife.
- Score the skin of the pomegranate from top to bottom into sections, making shallow cuts through the skin.
- Immerse the pomegranate in a bowl of water and delicately split it along the scored lines.
- While submerged, use your fingers to detach the seeds from the white membrane.
- The seeds will sink, while the membrane will float. Remove the floating membrane, then strain the juicy pomegranate arils from the water.
Serving Suggestions
Tortilla chips is classic! The creamy dip with the crunch of crispy chips is perfect (Sea Salt Lime or Thin 'n Crispy Tortilla chips are my favorites) served on taco night, but this recipe is also great on top of grilled chicken, on a turkey sandwich, on mahi mahi fish tacos or California burgers, too.
