Wash and prepare all of the produce. Quarter the onion, peel the garlic, de-seed the jalapeño.
In a food processor, add tomatoes, garlic cloves, cilantro, jalapeño (de-seeded), red onion, oil, vinegar, and lime juice.
Pulse for 20-30 seconds until the vegetables are finely minced. Blend longer if you like a thinner salsa.
Serve with chips, other vegetables, on top of tacos, or whatever else you’d like.
