Start by preparing the rice according to the bag’s instructions.
Then, in a small skillet, add soy sauce, hot honey, lime juice, sriracha, and salt and pepper over medium heat. Whisk the sauce together until it thickens a bit and is well mixed. Add the shrimp in 1-2 minutes per side.
Wash and prepare the vegetables. Cook frozen edamame and remove from it’s shell if not already shelled. Dice red onion, and wash lettuce.
To assemble the lettuce wraps, take two pieces of lettuce stacked on each other, add rice, then the cooked shrimp, red onion, cheese, and edamame.
Drizzle with desired amount of spicy mayo and any remaining honey teriyaki sauce from the skillet. Garnish with green onions or sesame seeds if desired and enjoy!
