Equipment

  • 5-qt or larger stove pot
  • Vegetable peeler
  • Potato masher
  • Cutting Board
  • Knife
  • Measuring cups and spoons
  • strainer

Ingredients

  • 5 cups water
  • 5 sweet potatoes
  • 6 tbsp butter
  • 1 tbsp sea salt
  • 1 tbsp hot sauce
  • 4 tbsp elote seasoning
  • ¼ cup half and half
  • ½ cup gouda cheese shaved
  • 8 stalks fresh thyme
  • 2 tbsp parsley
  • 1 tbsp olive oil

Instructions

  • Pour water into a pot and heat to high heat. Let it come to a boil.
  • Using a vegetable peeler, remove all of the skin from the sweet potatoes. Then, cut your peeled potatoes into ¼” slices and then again into quarters. We want them to be bite-sized!
  • Place the sweet potato chunks into the boiling water. Boil for 20 minutes or until all potatoes are tender. You should be able to pierce them with a fork.
  • Drain the water and turn the heat down to medium-low. Before adding the potatoes back to the pot, add the butter and let it soften.
  • Add the potatoes back in. Then, add salt, hot sauce, elote seasoning, half and half, shaved gouda cheese, fresh thyme, and parsley.
  • Mash the potatoes with a potato masher until you receive your desired mashed potato consistency.
  • Garnish with fresh thyme, slice of butter or two, and enjoy!

Notes

Best served right after making, however leftovers can be kept in an airtight container for up to 3 days. Reheat in the microwave in 30 second intervals
You don’t HAVE to peel the potatoes, but doing so will help create a smoother texture. Because this is a savory recipe, the skins would actually help incorporate some earthy flavor.
