Strawberry Mint Sunshine Cocktail Recipe

This Strawberry Mint Sunshine Cocktail is the perfect transitional drink to take you from indoor winter happy hours to spring patios and rooftops. It's full of bright and refreshing flavors topped off with OLIPOP, a heathier soda alternative.

Equipment

  • Cocktail glass
  • Handheld juicer
  • Jigger
  • Muddler
  • Cocktail stirrer
  • Cocktail shaker
  • cocktail strainer
  • Cutting Board
  • Knife

Ingredients

  • 1.75 oz vodka
  • 0.75 oz Malibu
  • 6 oz Strawberry Vanilla OLIPOP
  • 0.5 oz lemon juice
  • 2 fresh strawberries
  • 5 mint leaves

Instructions

  • Fill a cocktail glass with ice. Set aside.
  • Next, add finely diced strawberries, mint, lemon juice, and vodka and Malibu to a cocktail shaker.
  • Muddle for 30-60 seconds or until the strawberries have completely broken down and the mint is fragrant. Then, strain the mixture in the cocktail glass over ice.
  • Top off the cocktail with Strawberry Vanilla Olipop. Then, garnish with more strawberries and mint. I also salted the rim. Dress it up however you'd like!
  • Enjoy!

Notes

I don’t recommend storing this cocktail because of the carbonation. If left to sit, it will turn flat. Yuck!
If you can't find OLIPOP, you could use a strawberry lemonade. Snapple has a VERY delicious Strawberry Kiwi product that would SHINE in this cocktail! You could also use a sparkling strawberry flavored or coconut water with strawberry bitters.
