Mint Chocolate Smoothie

Ice cream for breakfast is a yes from me. This Healthy Mint Chocolate Smoothie tastes just like mint chip ice cream and has a smooth, creamy texture but is made with healthier, nutrient packed ingredients!

Ingredients

  • ¼ cup filtered water
  • ¾ cup spinach fresh or frozen
  • 4-6 mint leaves
  • 1 frozen banana
  • ½ cup vanilla Greek yogurt
  • 1 scoop Thin Mint protein powder Clean Simple Eats
  • ¾ cup vanilla almond milk or milk of choice
  • 2 Thin Mint cookies

Instructions

  • Add the frozen spinach, mint leaves and filter water into a high-powered blender. Blend until the greens have completely liquified. This is crucial so there are no green chunks throughout the smoothie.

  • Add the remaining ingredients except the Thin Mints and blend until smooth. Depending on your desired consistency, you may need to add more or less almond milk
  • Crumble the Thin Mint cookies last and pulse until evenly distributed!

  • Pour into a glass (rimmed with chocolate optional), garnish with a scoop of creamy cool whip, thin mint cookie crumbles and/or cacao nibs.

Notes

Adding ⅛ tsp mint extract will give a stronger minty flavor, while adding chocolate protein/cocoa powder will give a stronger chocolate flavor. 
Always blend the leafy greens with water before adding anything else! It helps SO much with consistency and color of the smoothie.
