Apple Cinnamon Bites

There's just something about the salty peanut butter with sweet apple bits and the zing of cinnamon that makes these Apple Cinnamon Bites taste so dang delicious!

Ingredients

  • 1 cup apple, chopped I used honeycrisp
  • ½ cup peanut butter
  • ½ cup old fashioned oats
  • 1 tsp. cinnamon sugar
  • ¼ cup finely chopped slivered almonds

Instructions

  • First dice the apple into cubes. The smaller the better.
  • Then combine all of the ingredients in a mixing bowl.
  • Mix together until well combined and all ingredients are sticking together
  • Chill the dough for 10 minutes in the fridge
  • Remove dough from fridge and form small balls with either your hands or a small cookie scooper. Enjoy!

Notes

For a nut free version, try using sunbutter or tahini instead. 
Do NOT substitute steel cut oats. You'll end up with a weird, tough texture.
Store in the fridge for 1 week or freeze for up to 3 months. I like to add a few to individual baggies to easily grab and take on the go.
