Raspberry Rice Krispie Treats

These Raspberry Rice Krispie Treats are soft and chewy with fresh raspberry flavor. They are a Valentine's Day inspired treat with a fun fruity and chocolate mix!

Equipment

  • 6 Quart Sauce Pot
  • Measuring Cups
  • Wooden Spoon
  • 9 inch pie dish or 8x8 square pan

Ingredients

  • 4 cups Rice Krispies
  • 1 bag mini marshmallows 10oz
  • ½ cup freeze dried raspberries* not fresh!
  • ½ cup dark or milk chocolate divided
  • 4 tablespoons unsalted butter

Instructions

  • In a sauce pan, melt butter and marshmallows on low; stirring constantly.
  • Stir in rice krispies then mix together with a wooden spoon. Once combined, add freeze-dried raspberries. Add in ¼ cup of the dark chocolate.
  • Pour the Rice Krispies mix into a greased or parchment lined baking dish. Spread to the edges of the dish.
  • Melt the remaining chocolate in the microwave in 30 second intervals, stirring between each.
  • Drizzle the melted chocolate over top and sprinkle with extra raspberries.
  • Chill in the fridge for 20-30 minutes. Then slice and enjoy!

Notes

I prefer to store them in the refrigerator, but the counter is also fine. They keep for up to 5 days or you can freeze for up to 3 months.
Do not use fresh raspberries, they will not work! Instead be sure to use freeze dried raspberries, I usually buy mine from Target or Trader Joes.
