For the bread
- 1⅓ cup Birch Benders Confetti Pancake Mix
- 1¼ cup water
- 1 ripe banana
- 1 egg
- ½ cup + 2 tbsp all purpose flour
- 1 tbsp rainbow sprinkles
- ½ tsp baking powder
- ¼ tsp almond extract
- pinch of salt optional
For the frosting
- ½ cup powdered sugar
- splash of almond milk or another milk
Preheat oven to 350°F.
In a mixing bowl, mash the banana with a fork.
Then, whisk in egg, almond extract, and water to create a fairly liquidy mixture.
In another bowl, combine the funfetti pancake mix, all purpose flour, baking powder, sprinkles, and an optional pinch of salt.
Then, fold the dry ingredients into the wet mixture until you achieve a batter consistency.
Spray an 8”x4” loaf pan with cooking oil or line with parchment. Pour batter into the pan.
Bake for 35 minutes or until a toothpick comes out clean.
While the bread bakes, combine frosting ingredients in a small bowl until a glaze has formed.
Remove bread from the oven. Once slightly cooled, top with more rainbow sprinkles and frosting.
Slice the birthday king or queen (or yourself) a nice big piece and enjoy!
Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
