Birthday Bread

Birthday Bread is dense, moist, filled with fun rainbow sprinkles and topped with a sugary glaze. It's perfect to enjoy as a sweet breakfast, snack, or after dinner dessert.

Ingredients

For the bread

  • 1⅓ cup Birch Benders Confetti Pancake Mix
  • cup water
  • 1 ripe banana
  • 1 egg
  • ½ cup + 2 tbsp all purpose flour
  • 1 tbsp rainbow sprinkles
  • ½ tsp baking powder
  • ¼ tsp almond extract
  • pinch of salt optional

For the frosting

  • ½ cup powdered sugar
  • splash of almond milk or another milk

Instructions

  • Preheat oven to 350°F.
  • In a mixing bowl, mash the banana with a fork.
  • Then, whisk in egg, almond extract, and water to create a fairly liquidy mixture.
  • In another bowl, combine the funfetti pancake mix, all purpose flour, baking powder, sprinkles, and an optional pinch of salt.
  • Then, fold the dry ingredients into the wet mixture until you achieve a batter consistency.
  • Spray an 8”x4” loaf pan with cooking oil or line with parchment. Pour batter into the pan.
  • Bake for 35 minutes or until a toothpick comes out clean.
  • While the bread bakes, combine frosting ingredients in a small bowl until a glaze has formed.
  • Remove bread from the oven. Once slightly cooled, top with more rainbow sprinkles and frosting.
  • Slice the birthday king or queen (or yourself) a nice big piece and enjoy!

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
