Pineapple Moscow Mule

Bring on those summer vibes with this light, tropical and delicious Pineapple Moscow Mule. It's got the most refreshing kick thanks to some muddled jalapeño!

Equipment

  • copper mug
  • Handheld juicer
  • jigger (used to measure ounces of alcohol)
  • Cocktail stirrer
  • Cutting Board
  • Knife
  • Muddler

Ingredients

  • ½ jalapeno
  • Ice cubes
  • 2 oz Vodka of Choice can be flavored or unflavored
  • 6 oz Diet Ginger Beer
  • ½ oz Lime Juice
  • 2 oz pineapple juice

For garnish (all optional)

  • pineapple
  • jalapeno
  • fresh rosemary
  • fresh mint

Instructions

  • Wash and dry your jalapeno. Then, slice. Place 2-3 slices in a cocktail glass.
  • Next, muddle your jalapenos in the glass. Then, fill with ice.
  • Add vodka to the glass.
  • Top with ginger beer & lime juice. Stir.
  • Juice 3-4 slices of pineapple with a handheld juicer. Pour juice into cocktail glass.
  • Garnish your drink with slices of pineapple and jalapeno and fresh rosemary or mint.

Notes

Because ginger beer is carbonated, I don’t recommend making these well in advance. However, you could combine all of the other ingredients and then add the ginger beer just prior to serving.
To make this a mocktail, just leave out the vodka and using ginger ale instead of ginger beer!
