Fajita Burger Wrap

Everything you love about fajitas in burger form and also everything you love about a burger wrapped up in a tortilla. This Fajita Burger Wrap is filled with juicy ground chicken, plenty of bright and fresh vegetables, cotija cheese and ALL of the fajita toppings.

Ingredients

For the burger

  • 2 T fajita seasoning
  • 1 lbs ground chicken
  • ½ cup bell pepper diced
  • ¼ cup red onion diced
  • 2 tbsp jalapeño diced
  • ½ cup cotija cheese
  • 2 tbsp cilantro
  • 1 lime

Wrap & Toppings

  • 4 tortilla wraps
  • queso
  • sour cream
  • salsa
  • lettuce
  • diced bell pepper

Instructions

  • Start by preparing the ingredients. Finely wash and dice: red onions, bell peppers, jalapenos, and cilantro.
  • In a mixing bowl, combine ground chicken, bell peppers, red onion, jalapeno, and fajita seasoning mixture, cilantro, lime juice, and cotija cheese together. Mix until ingredients are combined. 
  • Then heat a skillet to medium heat and spray with cooking spray. Use your hands to shape the burger into 4 equal sized patties. 
  • Cook each burger for 5-6 minutes on each side. Prior to flipping the first time, feel free to add additional cotija cheese crumbles to the top of the uncooked burger. You’ll get a caramelized cheese after flipping and it’s SOOO good. 
  • Once the burgers have reached an internal temperature of 160°F, remove them from the skillet. Get ready to assemble the wraps. 
  • Heat each wrap for 1-2 minutes on a clean skillet, just to get warm. 
  • Spread queso and sour cream on the bottom of the wrap. Then add fresh diced bell peppers and shredded lettuce. Top with a cooked Fajita Burger (sliced in half or quarters), layer any other condiments you’d like, and roll together.
  • If you’re making these into traditional burgers, grab some burger buns (I suggest brioche buns), top with lettuce, pickle, spicy mayo, bell pepper, queso, anything else you’d like, and bite on in!

Notes

Tip for dicing fresh herbs: use a pizza cutter! It’s less messy and much quicker. 
Instead of a wrap, you can serve on a bun for a more traditional style burger, or skip the bread all together and these burgers would also be delicious served over a fresh salad!
Store burger patties separate from wrap/toppings for up to 4 days.
