Blueberry Cucumber Salad with Peaches and Goat Cheese

Ingredients

  • 2.5 fresh peaches
  • 4 small english cucumber
  • ¾ cup fresh blueberries
  • 4 oz goat cheese log
  • 8-10 basil leaves
  • 1 tbsp jalapeño diced
  • ¼ cup red onion diced
  • 1 tbsp Mike's Hot Honey
  • 1 lime juiced
  • sea salt to taste

Instructions

  • Wash and dry all produce. 
  • Finely dice cucumbers, peaches, jalapeño, red onion, and julienne the basil leaves. 
  • Add all of the fruit and vegetables to a mixing bowl. Add crumbled goat cheese, the juice of one lime, and hot honey.
  • Toss lightly. Top with sea salt and enjoy!

Notes

Since there isn’t any lettuce to get soggy, this salad can be dressed and kept in an airtight container for 3 days. Do note, however, that the cucumbers release a bit of water as they sit, so you’ll want to toss the salad again before consuming.
Slice your onion and jalapeño SUPER finely so you’re getting just a bit in each bite. Both of these ingredients are unpleasant to get a hefty mouthful of in such a light and refreshing salad.
