Taco Meat
- 1 pound 93% lean ground turkey
- ½ cup red onion diced
- ½ cup canned diced tomatoes
- 1 tbsp cilantro
- ¼ cup white queso
- 1 tablespoon Elote seasoning alternative: taco / fajita seasoning
- 1 tablespoon olive oil
Nacho Toppings
- ½ cup shredded lettuce
- ½ avocado
- ½ cup roma tomatoes sliced
- ½ cup sharp cheddar cheese shredded
Other Ingredients
- 1 bag Tositos Multigrain Scoops
- extra sharp cheddar cheese
For the Taco Meat
Heat a skillet over medium heat. Add in olive oil, lean ground turkey, tomatoes, red onion, cilantro, elote seasoning, and queso.
Cook taco meat for 7-8 minutes or until meat reaches 165°F.
While the meat cooks, dice all desired toppings: shreaded lettuce, red onion, tomatoes, and sliced avocado.
Nachos
On a 11 x 14 sheet pan, lay out full size tostitos chips facing up (no crumbles of chips).
Take sharp cheddar cheese and place a pinch into each tostito scoop. This is very important because the cheese is going to be the barrier between the meat and the chip. If you skip this step, the chips could may become soggy.
Scoop a tablespoon of prepared taco meat mixture into each chip scoop.
Layer sliced avocado, tomatoes, and red onion evenly over the chips.
Sprinkle more shredded sharp cheddar cheese and drizzle desired amount of queso over the prepared nachos.
Broil for 3-5 minutes for 525°F or until cheese is melted and chips are slightly toasted.
Enjoy immediately with your favorite beverage while watching your team play!!
These nachos will not keep well in their fully constructed form. I highly suggest you enjoy them immediately out of the oven. If you'd like to prep in advance, you can cook the meat and chop up the toppings. Then keep everything in separate containers for quick assembly when you're ready to enjoy.
Make these your own! Substitute the turkey with ground chicken, ground beef, or black beans. Add any of your favorite toppings — salsa, sour cream, olives, jalapeños, etc.
