Chicken Apple Sandwich with Goat Cheese

Warm, grilled honey chicken on top of a toasted Tuscan bread, sandwiched with blueberry goat cheese, fresh apples and grilled onions. This Chicken Apple Sandwich has amazing flavor and will take your midday meal to the next level.

Ingredients

  • 2 slices La Brea Pane Toscano Round
  • 1 breast Grilled Chicken
  • ½ cup Vidalia Onion
  • ¼ Honeycrisp Apple
  • ¼ cup chopped spinach
  • 2 oz Blueberry Goat Cheese or any flavor you like
  • 2 tablespoons Honey Mustard
  • 1 tablespoon Honey
  • 1 teaspoon Olive Oil

Instructions

Prep Ingredients

  • Chicken: Ideally, fresh grilled chicken breast is the best for this recipe. I grill mine in a Ninja Foodi Grill for 9-11 minutes (or until internal temperature is 165° F). Rotisserie chicken or frozen chicken breast strips / tenders can be used too.
  • Onions: Heat the griddle to medium heat and grease. Add a sliced white vidalia onion to the skillet and sauté them until caramelized & brown (roughly 6-8 minutes).
  • After the onions are almost done cooking, heat the griddle to 300°F and grease completely. We're going to warm all the ingredients before assembling the sandwich. This ensures that each bite is consistent and warm. Add sliced apples, chopped goat cheese, and diced spinach to the grill. Lightly grease each side of the bread and place on the griddle as well.

Heat Ingredients

  • After the onions are almost done cooking, heat the griddle to 300°F and grease completely. We're going to warm all the ingredients before assembling the sandwich. This ensures that each bite is consistent and warm.
  • Add sliced apples, chopped goat cheese, and diced spinach to the grill. Lightly grease each side of the bread and place on the griddle as well.

Assemble

  • After about 2-3 minutes and the ingredients are getting warm, spread the honey mustard onto one side of the sandwich. Then add vadalia onions and sliced apples on top of the mustard. Add the sliced grilled chicken onto the apple/onion/mustard slice of bread. Drizzle desired amount of honey on top.
  • On the other slice of the bread, smear blueberry goat cheese around. Sprinkle diced spinach on top of the goat cheese.
  • Fold together each slice of bread together to form the sandwich.
  • If bread has not developed a golden crisp, grill for another 1-2 minutes on each side. Slice in half and enjoy!

Notes

Notes: I love making grilled sandwiches on a griddle. It allows plenty of workspace to warm the other ingredients and less dishes end up dirty.
