Peanut Butter Chocolate Granola

This Peanut Butter Chocolate Granola is made up of warm, toasted oats, creamy peanut butter, sweet maple syrup, and melted chocolate. It's all baked together in one of the most dreamy recipes I've ever created and eaten!

Ingredients

  • cups rolled oats
  • ½ cup chocolate pieces chopped, or chocolate chips
  • ¼ cup maple syrup
  • ¼ cup peanut butter
  • 2 tbsp cocoa powder
  • 2 tbsp brown sugar
  • 1 tbsp butter
  • pinch of salt

Instructions

  • Preheat oven to 325°F.
  • In a mixing bowl, fold together rolled oats, brown sugar, and salt. This coats the oats with sweetness from the start!
  • In a saucepan, melt butter, peanut butter, and maple syrup over medium heat. Whisk together until combined into a sauce-like mixture. Then, whisk in cocoa powder and stir until dissolved.
  • Pour chocolate sauce over sweetened rolled oats until evenly coated.
  • Line a sheet pan with parchment paper. Press on granola mixture evenly using a rubber spatula.
  • Bake for 15-18 minutes. While granola is baking, chop up chocolate.
  • Remove granola from the oven. Top with the chopped chocolate.
  • Place the pan back in the oven for an additional 2-4 minutes or until chocolate is melted. Then, use the rubber spatula to spread the melted chocolate.
  • Let granola cool for about an hour before breaking apart into pieces.

Notes

The most important step in this recipe is to LET YOUR GRANOLA COOL! Especially if you want big, chunky clusters. Let the sheet pan cool completely before going in and breaking the granola up. This will ensure the granola is fully set.
You could make your granola extra delicious (and crunchy!) by adding your favorite nuts. Walnuts, peanuts, and pecans would be great additions! You could also try coconut shavings, pumpkin seeds, or even white chocolate chips. Feel free to add whatever sounds best to you!
