In a mixing bowl, beat softened cream cheese, sugar, lemon juice, and vanilla extract. Then, scoop mixture into a piping bag and use to fill pastry squares with batter.
Slice apples thinly and layer onto cheese + pastry combo. About 5-6 apples per square.
Fold the puff pastries into squares by bringing in the corners and brush with egg wash.
Bake for 15 minutes, dust with powdered sugar and enjoy!
