Cook pasta

01.

First, prepare the noodles according to the box instructions. Once they are cooked, drain and rinse. Allow them to cool.

Prep veggies

Cook the frozen corn, chop the cherry tomatoes into quarters, use a vegetable chopper to evenly chop the cucumber and red onion. Dice cilantro.

Add to bowl

Add all of the chopped vegetables to the mixing bowl with the noodles. Add the lime zest over top.

Make dressing

04.

In the blender, add cilantro along with the olive oil and lime juice and blend for 30 seconds. Add yogurt and avocado and blend again.

Toss

05.

Pour dressing over top of the vegetables and noodles. Toss and enjoy!
