Wash and prepare all of the produce. Cook the corn if needed. Finely dice: tomatoes, red onion, jalapeño, red pepper, avocado, and cilantro.
Add the rinsed and drained beans and prepped veggies to a serving bowl.
To make the dressing, combine all ingredients in a jar and shake vigorously. Pour the dressing over the Healthy Cowboy Caviar.
Garnish with an additional 2 tablespoons of chopped cilantro before serving, flaky sea salt. Serve with a family size bag of chips, fresh vegetables, on top of tacos...so many options!
