Prep potatoes

01.

Pour water into a pot and heat to high heat. Let it come to a boil. Using a vegetable peeler, remove all of the skin from the sweet potatoes.

Cut potatoes

hen, cut your peeled potatoes into ¼” slices and then again into quarters. We want them to be bite-sized!

Boil

03.

Place the sweet potato chunks into the boiling water. Boil for 20 minutes or until all potatoes are tender. You should be able to pierce them with a fork.

Add seasonings

04.

Drain potatoes then add back to the pot with butter, salt, hot sauce, elote seasoning, half and half, shaved gouda cheese, fresh thyme, and parsley.

Serve

05.

Mash the potatoes with a potato masher until you receive your desired mashed potato consistency. Garnish with thyme and enjoy!
