Pour water into a pot and heat to high heat. Let it come to a boil. Using a vegetable peeler, remove all of the skin from the sweet potatoes.
hen, cut your peeled potatoes into ¼” slices and then again into quarters. We want them to be bite-sized!
Mash the potatoes with a potato masher until you receive your desired mashed potato consistency. Garnish with thyme and enjoy!
