I was craving a really yummy take out chicken smothered in a sticky sauce and when I saw a dish like this on Instagram that combined a honey garlic and spicy mayo, I decided I NEEDED to make my own version. And let me tell you, this one is FAB.
I love the corn avocado feta mixture tossed within! It pairs nicely with all of the other flavors and the sauce …. it’s DRINKABLE (kind of similar to the Big Mac Sauce I use on this Burger Bowl recipe).
I’ve shared this meal with a few different groups of people, and it really is a crowd pleaser. It’s funny because each group has compared it to different dishes, but all equally delicious.
I’ve received feedback it’s similar to Chinese takeout, a sweetened version of chipotle, a honey mustard chicken salad, etc. And I think that points to the unique combination of flavors that just WORK together. Let me know what you think! And if you love this bowl, also try my Bang Bang Bowl which has a similar sweet heat aspect — YUM!
Recipe Ingredients

- Chicken – I used chicken breasts and diced them into pieces. You can also use chicken tenderloins.
- Flour – To give our chicken a bit of a coating and to help the sauce stick.
- Rice – Success Rice is my favorite for convenience! Feel free to use white rice or brown rice.
- Corn Salad – Corn on the cob, avocado + feta. Yum!
- Chipotle Peppers in Adobo Sauce – We will use these chopped up as a garnish and it will also serve as one of the dressing ingredients in both sauces.
- Sauces – We will make two sauces: a honey teriyaki and a hot honey spicy mayo.
See the recipe card below for a full list of ingredients and measurements.
Substitutions and Variations
- Protein: For a vegetarian meal, use tofu for this recipe or a chickpeas if you wish. No matter what you choose, the sauce will make for a flavorful protein!
- Base: Over rice isn’t the only way to enjoy. Make this a salad, use cauliflower rice, a cup of quinoa or wrap everything up in a tortilla for a tasty burrito.
- Veggies: Add more veggies! Roasted broccoli florets, red onion, crispy shallots, red bell pepper, or thinly sliced red cabbage I think could work well in this recipe.
- Sauces: Mayo not your thing? Use a drizzle of ranch instead. Prefer a store bought glaze? Try a premade Honey Teriyaki chicken marinade like this one from Primal Kitchen with maximum flavor.
- Keep it simple: Just make the chicken + glaze and call it a day! This is most similar to the Honey Chicken you’d get at a Chinese restaurant.
How to Make This Recipe

1. Start by prepping the chicken breasts. Cut them evenly into ½ inch bite-size pieces. Put the cubes in a mixing bowl and coat in all purpose flour, salt and pepper mixture.

2. Add avocado oil (or olive oil) to a large skillet and heat to medium heat. Once hot, place the coated chicken in the pan and gently move around with a rubber spatula. The flour will make the chicken pieces stick together so it is important to keep moving them.

3. While the chicken is cooking, grab a small bowl for each sauces and whisk together ingredients for the honey chipotle mayo and the hot honey glaze. Be sure to mix until the all purpose flour is fully incorporated with the rest of the ingredients in the glaze. This will help thicken the sauce.

4. Once the chicken is almost fully cooked (use a meat thermometer – fully cooked is an internal temperature of 165°F.) add the sauce (around the 135°F mark). Stir to coat the chicken, then turn heat to medium low and stir until chicken is cooked and coated and sauce has thickened. Cook time will depend on how large your chicken pieces are.

5. In a separate mixing bowl, mix together cooked corn, 1 avocado (diced), crumbled feta cheese, and lime juice until combined. Set aside. Make the rice according to box instructions. I love using Success Boil-in-Bag for this. My Chipotle Cilantro Lime Rice would also be excellent.

6. Once everything is prepped (chicken, corn avocado mixture, both sauces, and rice), it’s time to assemble the bowls. Layer rice, glazed chicken, corn avocado mixture, diced adobo peppers, and honey chipotle mayo. Garnish with a lime wedge, green onion, and more chipotle hot honey sauce if desired. Enjoy!
PRO TIPS
- Prep each component before assembling the hot honey chicken bowls. Everything takes a little time on its own, but once it’s all ready to be scooped, each bowl comes together in no time! If you’re serving a group, it’s fun to let each person craft their own bowl and add more of the components they love and less of what they don’t.
Recipe FAQs
Store it in an airtight container for up to 3 days. This meal keeps really well completely assembled and can be reheated easily. A great option for meal prep!
You need to make sure the flour is fully incorporated into the sauce before adding to the skillet. If there are any clumps, they will only get larger once it hits the heat.
The two sauces in this recipe are super versatile and great with other dishes. If you have extra (or if you intentionally double the recipe (recommended!)) for the Honey Soy glaze, add this to salmon, tofu, as a sushi dipping sauce or drizzled on plain rice.
Serving suggestions
I like these rice bowls mixed all together and lathered in sauce, but that’s just my personal preference 😉. It has SO much flavor. If you’re looking for a tasty side dish to go with your Spicy Honey Chicken Rice Bowl, consider whipping up these sweet and spicy Asian Carrots or this Oriental Coleslaw.

Hey Amanda, thank you for this feedback. I just went back through the recipe card and tried to clean it up a bit/make it easier to follow. I also grouped the corn salsa ingredients together and added some process images to help with clarity. Thank you for the note as it’s always my goal to make it the easiest to follow.
