This is one of my post popular recipes on A Paige Of Positivity! It's been rated 5 stars countless times and I hope you love it! I can't tell you how many people tell me they made a batch and then whipped up another batch because it is SO GOOD! So go ahead and triple it, why don't you? 😉
Why you'll love this Easy Corn Dip
This Mexican Street Corn Dip is one of the most popular recipes on my Paige. It's inspired by warm, grilled Mexican corn on the cob, but in dip form!
You can serve it as a crowd favorite appetizer for game day with chips, tasteful spread for grilled chicken or flank steak, or as a snack to be enjoyed by the spoonful. It's also fabulous paired with homemade pork carnitas and my super delicious Homemade Guacamole.
What makes it so addicting? Feta and parmesan cheese, mayo, and roasted summer corn served with a lot of diced up veggies and seasoning. A dip never tasted so good! And if you're serving for a party - follow this Elote in a Cup recipe which is super simple, too.
I love serving for Cinco de Mayo, as a garnish to another one of my Mexican Recipes, like Crockpot Chicken Tacos, Ranch Taco Salad, or Fajita Burger Wraps.

Recipe Ingredients
- Corn: The best way to prepare this is to grill it, and then chill it. The char on the veggie really takes the dish to the next level. Low on time? Use frozen, cook-in-the-bag. Easy peasy!
- Feta Cheese: My FAVORITE cheese! Either feta or cotija is classically used for street corn, but I like .
- Light Mayonnaise: This coats all of the ingredients nicely and adds creaminess. You could also substitute Greek yogurt or 50/50 greek yogurt and mayo.
- Jalapeños: Optional for some heat! De-seed them if you don't want to be overwhelmed by the spice.
- Spices: I used chili powder, garlic salt, and pepper also.
See the recipe card below for a full list of ingredients and measurements.
How to Make This Recipe
1. Prepare the corn. This can be done in a variety of ways: on the grill, in the steamer or air fryer, or on the stovetop. I like to grill mine for 6-8 minutes on the grill setting in the Ninja Foodi Grill. It gives it the perfect amount of char and great texture. After cooking, trim the corn off the cobs and let cool.
2. While corn is cooking and/or cooling, prepare your produce. Dice your red onion, cilantro, and also optional jalapeños. I like to use my Vegetable Chopper to make sure everything is even.
3. In a mixing bowl, combine cooled corn, fresh cilantro, grated parmesan, feta crumbles, red onion, sriracha, optional jalapeños, seasonings, and mayo.
4. Fold all together. Add fresh lime juice and/or zest.
5. Garnish with an additional 2 tablespoons of chopped cilantro before serving. Serve with a family size bag of chips, fresh vegetables, on top of tacos...so many options!
Too much spice?
For more heat extra diced jalapeño (with the seeds is hotter!), sriracha or your other favorite hot sauce, cayenne pepper, or even serano peppers if you're really looking for spice. Whatever your favorite way to make something spicy is, you can likely do it to this dip.
Instead, if you want less heat, crank up the lime juice, corn, or mayo. You could even use Greek yogurt or sour cream instead for a more cooling affect.
Recipe FAQs
Store in the refrigerator in an air-tight container for up to 3 days. Stir before enjoying. I do not recommend freezing this dip.
Some other fun, yummy add-ins that will take this street corn dip to the next level: black beans, cotija cheese, queso, diced bell peppers, tomatoes, or green onions.
I also would recommend checking out the reviews on this post to see how other people have changed up this dip!
I use my Ninja 5-in-1 Foodi Grill. And I'm going to get on my soap box why this thing is so great:
If you're new around here, I'm going to let you in on my favorite kitchen appliance: the Ninja 5-in-1 Foodi Grill. It grills, bakes, dehydrates, roasts, and air fries...AND the inserts are all dishwasher safe! It's a foolproof way to cook delicious food ALL OF THE TIME!
I'm talking less than 10 minutes for grilled meat, 4-5 minutes for grilled vegetables, and any frozen food that usually takes 30 minutes plus in the oven will normally be ready in about 10-12 minutes.
Ninja Kitchen knew what they were doing when they created this. I store it in my kitchen cabinet (yes, it fits) and use it almost every day of the week.
P.S. This post is not sponsored. I just love this appliance.
Pro Tip
This dip is super customizable! Sometimes, I'll make the mayo mixture (mayo, lime juice, and sriracha) in the bowl and then I'll coat the vegetables in it.
Always adjust seasoning as you see fit. More lime juice? Sure! More salt? Up to you! Want it to be creamier? Add more mayo. Be creative.

Recipe
Mexican Street Corn Dip
Equipment
- Mixing Bowl
- Chef's Knife
- Cutting Board
- Rubber spatula or spoon
- Ninja 5-in-1 Foodi Grill optional
Ingredients
- 5 cups cooked corn, (~ approx 2, 10oz frozen bags)
- ½ cup Parmesan, shaved
- ½ cup Feta cheese, crumbles
- ½ cup red onion, diced
- ¼ cup cilantro, fresh
- 1 small jalapeño, diced
- ½-⅔ cup light mayo, depending on creaminess
- 1-3 tbsp sriracha, depending on desired heat
- 1 lime, juiced, see tip below*
Seasonings
- 1 ½ tsp chili powder
- 1 tsp garlic salt
- can use Trader Joe's Chile Lime seasoning in lieu of garlic salt & chili powder (I recommend ~1 tablespoon + more depending on taste)
Serve
- 1 bag tortilla/kettle cooked chips
Instructions
- Prepare the corn. I often use frozen corn, steam-in-bag. I will cook it, then put it in the fridge to sit overnight so it chills. See tips in the note section on methods of cooking corn.
- While corn is cooking and/or cooling, prepare the produce. Use a vegetable chopper to dice red onion and jalapeños. Finely dice cilantro.
- In a mixing bowl, combine fresh cilantro, grated parmesan, feta crumbles, red onion, and seasonings.
- Next, stir in olive oil mayo. This will create a dip like texture. Toss in the cooled corn, sriracha, and optional jalapeños.
- Fold all together. Add fresh lime juice and/or zest.
- Garnish with an additional 2 tablespoons of chopped cilantro before serving. Serve with a family size bag of chips, fresh vegetables, on top of tacos...so many options!
- Store in the fridge for up to 2 days if it even makes it to storage! Enjoy!

This dip is AMAZING!!! I made it as an appetizer for my dad's birthday. Everyone who tried it agreed that it was so delicious and it was gone within a matter of 10 minutes! I added a little bit of lime juice, but other than that I just followed the recipe as is. I served the dip with tortilla chips and it was the perfect combination! I will definitely be using this as a go-to recipe to bring to any sort of gathering from now on!!!!
Courtney Paige says
Love the idea of adding lime juice!! I recently made another batch and included lime per your comment - it was tasty!
Sam Palmucci says
I am obsessed with this recipe! I wanted a fresh dip with some flavor that I could snack on throughout the week - wow this hit the spot! I already made it twice and feel like it will be a weekly summer staple in the fridge. It takes no time to whip up, too. Would highly recommend!!!
Maddie says
Cannot say enough good things about the flavor and tasty-ness of this dip! I needed a quick app to bring to a bbq and this could not have been more of a crowd pleaser! I actually ended up throwing fresh corn in my insta pot to speed up the corn cooking process and it was cooked in 10 min and ready for mixing.
When I put the dip out at the bbq I think it lasted maybe 15 minutes and I had made a double batch. Everyone raved about it the whole night. Highly recommend 👌🏼
Katie says
Will be on REPEAT all summer and fall! So fresh and flavorful! And simple too - the best kind og recipe.
Jessica Romanowski says
This is one of my new all time FAVORITE dips! It’s super easy, and goes wonderful as a side dish, or as an appetizer with some chips for dipping! Even my family members who “don’t like” feta, fell in love with this dip!! I’ve made it twice in 2 weeks!
Hima says
An instant HIT! Made this twice in the same weekend, hoping for leftovers each time, but we always ate the whole thing.
TIP: if you're using frozen corn, throw it in the airfryer for 15 min to thaw and char a bit like it would on the grill.
Courtney Paige says
What a great idea - the char would be a fabulous addition!
Lauren says
Courtney isn’t messing with this one! This is seriously so refreshing and tasty. I’ve made it 10+ times and every time my guests ask for the recipe. I personally like to make mine a day ahead of the event (if there is one) because I prefer the flavors after it’s had time to settle and “marinade”. Love this so much!
Carolyn says
So good! Super Easy! Crowd Pleaser!
I live in Michigan and we wait all summer for the corn to be just right. This recipe highlights a seasonal treat and takes it to a whole new level. I have made this several times now and I am always asked to share the recipe.
My only little tips would be to take the time to grill the corn - it gives it just the right flavor and texture. And, don't be shy with the feta! I sprinkled a whole heap more on top!
Melissa says
I am obsessed with this dip! I made it for the Bachelorette premier and my roommates LOVED it. There is the perfect amount of kick to it with the sriracha. We had it with the Tostitos scoop chips and it was so delicious. My family already requested I make it for them too, so I can’t wait to make this again!
Melissa says
I also made quesadillas today for lunch and dipped it in the leftovers! Highly recommend it's delicious.
Courtney Paige says
Ooo - I'm going to pair it with quesadillas. Such a great idea!
Molly Everly says
I absolutely loved this dip, definitely my #1 favorite to make now. It was easy, and the outcome was DELICIOUS. I put the dip on shrimp tacos and had a side of dip with chips too!! Both ways are great.
Meg Feeley says
This recipe is next level! It is such a tasty, yummy dip. I made it for my family and everyone ate it up and requested I make more ASAP! 10/10 would recommend to someone wanting to make some DELICIOUS!!
I think I will have to have this on hand for taco night or quesadilla night!
Courtney Paige says
Thank you so much Meg! It's great on tacos too 🙂
Shannon says
Love this recipe, it’s easy to make and delicious! I made it for my roommate and it hit the spot 🙂 perfect appetizer and if you have leftovers, the dip went great with turkey tacos the next day!

I've made this dip SO many times. A favorite amongst the whole fam! The absolute best topping to a homemade chipotle bowl or taco salad 🤤
Madeline says
Made this over Christmas for my family and they went bonkers for it!!! Love you, Courtney!
Courtney Paige says
You're the sweetest, my friend!
Emily says
Guacamole MOVE out of the way. This dip is now #1. I don’t know what took me so long to try this dip, but it is AMAZING. Crunchy, creamy, spicy, a little sweet. It’s perfect in every way. Only tip: if you’re sensitive to spice, I would add the spicy elements in bits bc it can be spicy (I loved it, but the spicy ingredients can add up). All in all this recipe is absolutely amazing. Thank you Courtney!!!!!
Sarah says
This dip is amazing! So simple, so delicious and perfect for a million occasions! Not gonna lie, I was reluctant to share it at first because everyone was in awe when I made it, but Courtney you deserve all the praise for this recipe!
Tailgates, holiday parties, summer events, just a good snack, there's nothing this dip can't do.
Elana says
This dip is amazing!! I made it as an appetizer and it was gone within minutes! This is definitely becoming a household go-to 😊
Katie says
Can’t believe I waited so long to make this! It was a such a crowd pleaser and great to pair with chips and so different than your typical chips and guacamole or salsa, will be making again!
Jenn says
I made this for the Super Bowl and it did not disappoint. I have a hot corn dip I used to make that had about 25 steps, but this one was so quick and easy and perfect for taking someplace or sitting out for a game. The flavors were spot on. I used frozen corn but charred it up in a skillet, but can’t wait until summer when I can get some fresh corn.
Stephanie says
The best dip!! This recipe is a serious crowd pleaser! I’ve made it a couple of times and midway through any party, it’s gone! My boyfriend now requests that I make it just for fun... it’s that good!
Bella says
This spicy corn feta dip is truly incredible! Now that I finally tried it, it's going to be one of my go-to's! I have never had anything quite like it, and it was so easy. Definitely a crowd pleaser 🙂
