Preheat oven to 300 degrees F and prepare sheet pan with parchment paper. Dice pecans, almonds, and dried cranberries.
In a large mixing bowl, fold together old fashioned oats, diced pecans, diced almonds, pumpkin seeds and dried cranberries. Toss with a fork.
Mix in melted coconut oil and put mixture onto lined sheet pan. Using a rubber spatula, press it firmly down into the pan.
Bake for 20 minutes. Remove from the oven and let cool on pan for 10 minutes to harden.
Enjoy with yogurt, milk, or by itself as a snack!
