Cinnamon Donut Bread

- 1 cup spiced apple cider ~½ c simmered & reduced
- 1 stick unsalted butter room temperature
- ¾ cup light brown sugar
- 2 eggs
- 2 tsp vanilla extract
- ⅓ cup applesauce sweetened for a sweeter bread
- ½ cup vanilla greek yogurt
- 1 tsp nutmeg
- 2 tsp ground cinnamon
- 2 tsp baking powder
- 2 cups all purpose flour
- 1 ½ tbsp cornstarch
- ¼ tsp salt
Topping
- 3 tbsp white sugar
- 1 ½ tsp ground cinnamon
Start by heating a small sauce pan to medium heat. Heat the apple cider, stirring constantly, until it’s reduced to a ½ a cup (8-10 minutes), then remove from heat.
Preheat the oven to 350°F, then in a stand mixer, combine room temperature butter and brown sugar until smooth.
Add in eggs and vanilla extra and beat again.
Pour in the applesauce and greek yogurt, beating again until all of the wet ingredients are smooth.
Add in all of the dry ingredients. Beat until well combined.
Lastly, pour in the cooled, reduced apple cider. Mix until batter is consistent throughout.
Line a loaf pan with parchment paper and spray with baking spray. Add all of the batter to the prepared loaf pan and bake in the preheated oven for 38-45 minutes or until bread has risen and toothpick comes out clean.
In a separate smaller bowl, combine the toppings ingredients and stir.
When the bread comes out, sprinkle the cinnamon-sugar mixture on top and slice. Enjoy!
If you choose to add any mix-ins (nuts, chocolate chips, chopped apples, dried fruit, etc.) be sure to not add too many as this will weigh down the loaf and prevent it from rising properly.
Store your bread covered at room temperature for 3 days or in the fridge for up to 5 days.
This recipe wasn’t tested without a stand mixer. If you’re opting to use an electric hand mixer, be sure that the butter is at room temperature for at least 24 hours+ to ensure smooth beating.
