About this Sandwhich

There are not many fall lunch recipes that beat this Grilled Chicken Apple Sandwich. It’s comprised of incredible flavors, easy to whip up, and super hearty.

I have been purchasing La Brea Bakery bread for years at my local Kroger store. It’s one of my favorite things to pick out as I always am looking at switching it up; between their loaves, rounds, or baguettes. For this sandwich, I selected the Pane Toscano. It’s the perfect texture and grills to a crisp.

Each bite includes a crisp apple, honey roasted chicken, and creamy, blueberry goat cheese. It’s absolutely delish. And my grilled sandwich pro-tip, everything needs to be warmed – not just the bread. That’s why the ingredients all hit the skillet to create an elevated sammy.

Recipe Ingredients

  • La Brea Bakery Bread – I used a Pane Toscano loaf. It’s got a hearty crust, but soft white center perfect for a grilled sandwich.
  • Chicken – I suggest a thin grilled chicken breast for this recipe. Rotisserie chicken or deli sliced chicken are also options.
  • White Vidalia Onion – We will caramelize these for a delicious sandwich topping.
  • Honey Crisp Apple – The juicy, fresh crunch apple provides to this recipe is so refreshing. I think Granny Smith would be good, too.
  • Goat Cheese – I used blueberry flavored goat cheese to highlight the fruity sweetness of this sandwich. Plain or any other flavor is also fine.

How to Make This Recipe

Prep ingredients:

Chicken: Ideally, fresh grilled chicken breast is the best for this recipe. I grill mine in a Ninja Foodi Grill for 9-11 minutes (or until internal temperature is 165° F). Rotisserie chicken or frozen chicken breast strips / tenders can be used too.

Onions: Heat the griddle to medium heat and grease. Add a sliced white vidalia onion to the skillet and sauté them until caramelized & brown (roughly 6-8 minutes).

Heat ingredients:

After the onions are almost done cooking, heat the griddle to 300°F and grease completely. We’re going to warm all the ingredients before assembling the sandwich. This ensures that each bite is consistent and warm. Add sliced apples, chopped goat cheese, and diced spinach to the grill. Lightly grease each side of the bread and place on the griddle as well.

Assemble

After about 2-3 minutes and the ingredients are getting warm, spread the honey mustard onto one side of the sandwich. Then add vadalia onions and sliced apples on top of the mustard. Add the sliced grilled chicken onto the apple/onion/mustard slice of bread. Drizzle desired amount of honey on top.

On the other slice of the bread, smear blueberry goat cheese around. Sprinkle diced spinach on top of the goat cheese.

Fold together each slice of bread together to form the sandwich. If bread has not developed a golden crisp, grill for another 1-2 minutes on each side. Slice in half and enjoy!

How do you store it?

Because this is a warm sandwich, I recommend enjoying it fresh off the griddle. If you are preparing it for lunch in the morning, wrap it tightly in foil so it stays fresh and secure. If you have leftovers you want to save, do so also wrapped in foil for 1-2 days. I suggest reheating on the griddle to keep the bread crisp.

What should I serve with this chicken sandwich?

I recommend pairing it with a fresh pickle, chips, a side of fruit, Roasted Sweet Potato FriesOrzo Pasta Salad, or this simple Spinach Quinoa Salad

How can I prevent my bread from burning?

Control the heat source! Keeping the griddle at a steady medium heat will allow the ingredients to warm without burning the bread. Also be sure not to skip the oil on the bread!

    ooooh the blueberry goat cheese on this sandwich really works! I love how all the ingredients are warmed on the griddle, too. So much better than just the outside of the bread being grilled

    Hello, This sounds wonderful. I would like to make this sandwich as a tea sandwich that is fresh not grilled. Could you use regular goat cheese and mix with blueberries? Also if you were making this as a fresh sandwich would you still grill all the ingredients? Have you tried this without grilling anything and using fresh bread?

      Hi Corrie! Regular goat cheese + blueberries would definitely work, or goat cheese mixed with a bit of berry jam might mix together easier. We would still recommend grilling the chicken and caramelizing the onions, but the other ingredients can be added raw. We’d love to hear how it turns out!
