Then it's all wrapped up! It tastes just like the salad that I've literally been eating for a year straight. Take my word for it—you're never going to get sick of it!
If you're looking for a fresh wrap to incorporate into your lunch rotation, give this one a try! Feel free to substitute any of the ingredients with ones that YOU like. It's also pretty versatile and I really think you're going to love it!
Fresh & delicious ingredients
Chicken Breast: I grilled my chicken breast because it's my favorite way to prepare chicken. Check out my Ninja Foodi Grilled Chicken recipe to learn how I do it!
Onion: I used a red onion for some bitterness.
Hummus: A seriously underrated spread! I love it on sandwiches and also wraps. Use your favorite flavor here.
Joesph’s Lavash Wrap: I like these because they're more macro-friendly.
Tomatoes: I used cherry tomatoes.
Cheddar Cheese: This recipe uses fat-free cheddar cheese. However, you could use a regular cheddar cheese if you'd like/aren't tracking macros.
Cucumber: For some crunch!
Pickles: I LOVE pickles. So yummy!
Spinach: Such a great green for a salad.
Tzatziki Sauce: Adds an amazingly creamy element to this wrap! I made my own, but you can substitute Trader Joe's or Boars Head Greek Yogurt Tzatziki, too. If you are going to make your own, then you'll need Greek yogurt, lemon juice, dill, and pickles. See the amounts in the recipe card at the end of this post.
Minimal kitchen equipment needed
To make this Creamy Mediterranean Chicken Wrap, you will need a cutting board, skillet, chef's knife, and also a rubber spatula.
How to make this Creamy Mediterranean Chicken Wrap
This Creamy Mediterranean Chicken Wrap comes together quickly. I recommend preparing all of the ingredients first so building the wrap is simple. Check out my Ninja Foodi Grilled Chicken recipe for my favorite way to prepare chicken. Finely dice everything so you get it all in one bite.
Once you have all the ingredients prepped, make the wrap:
- Spread hummus on a Lavash wrap. Then, layer red onion, cherry tomatoes, and thin slices of cucumber in the middle of the wrap.
- Slice cooked chicken into strips. You can also use pre-made chicken strips, too.
- Add the pickles, spinach, and homemade or store-bought tzatziki sauce. If you’re making the sauce yourself, just put all of the ingredients into a bowl and then mix.
- Top ingredients with fresh dill and sprinkle of lemon pepper. Wrap like a burrito and ENJOY!
How do I keep my wrap from falling apart?
If you like a LOADED wrap like I do, you may find it’s impossible to keep this Creamy Mediterranean Chicken Wrap as a hand held food! Here’s a few tips on keeping your wrap from falling apart:
- Keep your fillings in the center of the wrap. Also, try not to pile any individual section too high. The exception is the hummus. You can spread this across the entire wrap and it’ll act like glue to keep everything together.
- Heat your wrap for about 15 seconds in the microwave prior to filling. This will prevent it from cracking. This is helpful if you’re using a drier wrap. Joseph’s Lavash wraps are pretty flexible, however.
- Fold the ends inward to prevent your fillings from falling out of the top or bottom. Also, continue to “tuck” the wrap as you roll.
- Serve the wrap seam side down or use a toothpick to secure the outer edge.
Questions about this Creamy Mediterranean Chicken Wrap
How do I store this wrap?
Don't store this for too long or the wrap will get soggy. It would be fine to make in the morning and keep in the refrigerator until lunch time, but I wouldn't store much longer than that.
Can I make this for meal prep?
You could, but I recommend storing all of the ingredients separately and assembling right before you eat. Otherwise, the wrap will be soggy.
I can't find Joseph's Lavash wraps. Help!
I chose Joseph’s Lavash wraps because they have great macros, but any wrap or tortilla will do. If you have a Trader Joe’s near you, I love their low carb tortillas, but you may need to use two to fit all of the fixings.
Does it matter what kind of hummus I use?
Nope! Use your favorite.
Can I heat this wrap up?
I don't recommend eating this warm. If you microwave it, then the tzatziki sauce will develop a weird texture.
What is tzatziki sauce?
Tzatziki sauce is a fresh and creamy sauce made with a Greek yogurt base. It's then flavored with dill, garlic, cucumbers, lemon, salt, and pepper. It's absolutely delicious!
