Banana Peanut Butter Overnight Oats

These Banana Peanut Butter Overnight Oats take a classic combination and turn it into an easy breakfast recipe for busy mornings. Prep them ahead of time so you can grab something quick, sweet, and delicious!

Ingredients

  • 2 ripe bananas
  • 1 cup milk I like 2% or Fairlife for extra protein
  • 1 cup old-fashioned oats
  • 1 cup greek yogurt plain or vanilla works
  • 1 tbsp chia seeds
  • 1 tsp ground cinnamon
  • ½ cup creamy peanut butter melted

Instructions

  • Decide whether you're going to prep this recipe in portion size tupperware/a mason jar or in one big batch. If using multiple containers, divide this recipe by two or four to ensure equal proportions.
  • Mash the bananas with the back of a fork in the storage container.

  • Once mashed, pour the rest of the ingredients (except the peanut butter) into the bowl.

  • Stir together so the oats are covered. Pending time allows, refrigerate the oats for 2-4 hours before adding the hard-shell peanut butter topping. If not, simply stir the peanut butter into the oat mixture before placing in the refrigerator.

  • Before serving, melt the peanut butter in a microwavable safe bowl for 30 seconds. Pour onto the top of the overnight oats and allow to harden (to create that “magic shell” top!).

Notes

Keep your oats in the refrigerator until you're ready to eat. I wouldn't recommend storing them for more than 3 days or they'll get mushy.
You can eat these oats warm or cold. Keep in mind that you may need to add more milk for creaminess if you heat them in the microwave or on the stovetop.
