Pineapple Moscow Mule

Bring on those summer vibes with this light, tropical and delicious Pineapple Moscow Mule. It's got the most refreshing kick thanks to a hint of jalapeño!

Equipment

  • copper mug
  • Handheld juicer
  • jigger (used to measure ounces of alcohol)
  • Cocktail stirrer
  • Muddler

Ingredients

  • ½ cup Ice cubes
  • 2 oz Vodka of choice
  • 2 oz pineapple juice
  • ¾ oz jalapeno limeade
  • 6 oz Ginger Beer
  • jalapeno **see notes for spice level

For garnish (all optional)

  • pineapple
  • jalapeno slices
  • fresh mint

Instructions

  • Add ice, vodka, pineapple, and jalapeno limeade juice to the glass.
  • **If you do not have Jalapeno Limeade (found seasonally at Trader Joe's), simply muddle 3-4 jalapeno slices with 2 ounces of simple syrup and a mint leaf. Strain the syrup into the cocktail to turn up the heat. **
  • Top with ginger beer. Stir.
  • Garnish your drink with slices of pineapple and jalapeno. Enjoy!

Notes

If you do not have Jalapeno Limeade (found seasonally at Trader Joe's), simply muddle 3-4 jalapeno slices with 2 ounces of simple syrup and a mint leaf. Strain the syrup into the cocktail to turn up the heat. 
Garnish with a tajin rim for more kick!
Because ginger beer is carbonated, I don’t recommend making these well in advance. However, you could combine all of the other ingredients and then add the ginger beer just prior to serving.
To make this a mocktail, just leave out the vodka and using ginger ale instead of ginger beer!
