  • Large mixing bowl
  • Whisk
  • Loaf Pan
  • Measuring cups and spoons
  • Fork

For the bread

  • 1⅓ cup Birch Benders Confetti Pancake Mix
  • cup water
  • 1 ripe banana
  • 1 egg
  • ½ cup + 2 tbsp all purpose flour
  • 1 tbsp rainbow sprinkles
  • ½ tsp baking powder
  • ¼ tsp almond extract
  • pinch of salt, optional

For the frosting

  • ½ cup powdered sugar
  • splash of almond milk, or other dairy free alternative

  • Preheat oven to 350°F.
  • In a mixing bowl, mash a ripe banana with a fork.
  • Whisk in egg, almond extract, and water. This is going to create a pretty liquidy mixture. That's okay.
  • In another bowl, combine the funfetti pancake mix, all purpose flour, baking powder, sprinkles, and an optional pinch of salt.
  • Fold the dry ingredients into the wet mixture until you achieve a batter consistency.
  • Spray an 8”x4” loaf pan with cooking oil. Pour batter into the pan.
  • Bake for 35 minutes or until a toothpick comes out clean.
  • Two minutes prior to removing the bread from the oven, combine frosting ingredients in a small bowl until a glaze has formed.
  • Remove bread from the oven. Once slightly cooled, top with more rainbow sprinkles and frosting.
  • Slice yourself a nice big piece and enjoy!

Make sure to spray your loaf pan. This bread is dense and will be difficult to remove if you don't. Also, because this bread uses pancake mix as it's base, it’s okay if the bread is a little undercooked in the center.
