Did someone say pancakes? And banana bread? For breakfast??
I sure did. I've seen other bloggers manipulate boxed cake, waffle, and pancake mixes before, and I've always wanted to try it myself. When Birch Benders released their new Organic Confetti Pancake Mix filled with rainbow sprinkles, I knew I needed to create something incredibly delicious with it. Funfetti is one of my favorite cake flavors!
So, I'd like to introduce all my Positivities (the name my boyfriend Jack lovingly gave you all) you to this dense, moist, and wonderfully sweet and colorful Funfetti Pancake Bread. Filled with fun rainbow sprinkles and topped with a sugary glaze, it's perfect to enjoy as a sweet breakfast, snack, or after dinner dessert.
I love dunking a slice in a cold glass of almond milk, warmed up and doused in fresh maple syrup and powdered sugar, or toasted with butter! I love this bread because it isn't TOO sweet.
Easy ingredients for funfetti pancake bread
For the bread:
Water: To help combine our dry ingredients.
Ripe Banana: Makes this pancake bread taste a little like banana bread!
Organic Funfetti Pancake Mix: I used this mix by Birch Benders.
Flour: This recipe uses all purpose flour.
Egg: Helps give our bread structure.
Rainbow Sprinkles: Yes, there are sprinkles in the pancake mix but there's always room for more!
Baking Powder: This will help our bread rise and create a fluffy texture.
Almond Extract: For a more nuanced flavor.
Salt: A pinch is optional to balance out the sweetness.
For the frosting:
Powdered Sugar: A baking staple to whip up a quick, delicious frosting and top your dessert with a little extra sweetness!
Almond Milk: Feel free to use another dairy free alternative.
Kitchen equipment you'll need for funfetti pancake bread
To make this Funfetti Pancake Bread, you will need a large mixing bowl, whisk, a loaf pan, measuring cups and spoons, and a fork.
This is a one bowl recipe...you're welcome!
- Preheat oven to 350°F.
- In a mixing bowl, mash a ripe banana with a fork.
- Whisk in egg, almond extract, and water. This is going to create a pretty liquidy mixture. That's okay.
- In another bowl, combine the funfetti pancake mix, all purpose flour, baking powder, sprinkles, and an optional pinch of salt.
- Fold the dry ingredients into the wet mixture until you achieve a batter consistency.
- Spray an 8”x4” loaf pan with cooking oil. Pour batter into the pan.
- Bake for 35 minutes or until a toothpick comes out clean.
- Two minutes prior to removing the bread from the oven, combine frosting ingredients in a small bowl until a glaze has formed.
- Remove bread from the oven. Once slightly cooled, top with more rainbow sprinkles and frosting.
- Slice yourself a nice big piece and enjoy!
Not feeling funfetti? Try these options
Birch Benders has a line of other pancake mix flavors you could use in this recipe including chocolate chip, blueberry, and banana cinnamon. I haven’t tested any of them, but the different mixes won't affect how the bread bakes.
You could also use regular pancake mix and insert your own flavors! Butterscotch chips, dried fruit, nuts, and whatever other baking essentials you enjoy could be used to customize this dessert bread however you like!

However you like! I love keeping mine in the fridge and eating it cold with a glass of almond milk. You could also enjoy it warmed up and doused in fresh maple syrup and powdered sugar or toasted with butter.
Can I make pancakes with this recipe instead?
I think so! I haven't tested this, but I don't see why you couldn't scoop this batter onto the griddle and enjoy that way!
Is there anything I should watch out for?
Make sure to spray your loaf pan. This bread is dense and will be difficult to remove if you don't. Also, because this bread uses pancake mix as it's base, it’s okay if the bread is a little undercooked in the center. To make your life easier, line the pan with parchment paper.
Can I freeze this pancake bread?
Yes, you can. I recommend you freeze the bread by the individual slice by wrapping in tinfoil and then in an airtight plastic baggie. Then, toast or defrost before enjoying.
