About this Bread
Did someone say pancakes? And banana bread? For breakfast??
I sure did. I've seen other bloggers manipulate boxed cake, waffle, and pancake mixes before, and I've always wanted to try it myself. When Birch Benders released their new Organic Confetti Pancake Mix filled with rainbow sprinkles, I knew I needed to create something incredibly delicious with it.
So, I'd like to introduce to you to this dense, moist, and wonderfully sweet and colorful Birthday Bread. It's filled with fun rainbow sprinkles and topped with a sugary glaze, it's perfect to enjoy as birthday (or everyday) sweet breakfast, snack, or after dinner dessert.
I love dunking a slice in a cold glass of almond milk, warmed up and doused in fresh maple syrup and powdered sugar, or toasted with butter! If you've got a celebration coming up, make this Birthday Bread!

Recipe Ingredients
- Banana: You want in ripe and spotty to add sweetness! It also gives this birthday bread a little bit of banana bread flavors!
- Organic Funfetti Pancake Mix: Birch Benders is one of my favorite brands when it comes to baking mixes. They have SO many varieties of mixes that are so fun to try.
- Rainbow Sprinkles: Yes, there are sprinkles in the pancake mix but there's always room for more! I suggest Cylinder sprinkles that won't spread much or lose their color.
- Almond Extract: Brings a sweet, fruity flavor to the bread, more distinct than vanilla.
- Powdered Sugar: A baking staple to whip up a quick, delicious frosting and top your dessert with a little extra sweetness!

How to Make This Recipe
- Preheat oven to 350°F.
- In a mixing bowl, mash the banana with a fork.
- Then, whisk in egg, almond extract, and water to create a fairly liquidy mixture.
- In another bowl, combine the funfetti pancake mix, all purpose flour, baking powder, sprinkles, and an optional pinch of salt.
- Then, fold the dry ingredients into the wet mixture until you achieve a batter consistency.
- Spray an 8”x4” loaf pan with cooking oil or line with parchment. Pour batter into the pan.
- Bake the bread for 35 minutes or until a toothpick comes out clean.
- While the bread bakes, combine frosting ingredients in a small bowl until a glaze has formed.
- Remove bread from the oven. Once slightly cooled, top with more rainbow sprinkles and frosting.
- Slice the birthday king or queen (or yourself) a nice big piece and enjoy!
Recipe FAQs
Absolutely! Birch Benders has an extensive line of other pancake mix flavors you could use in this recipe including chocolate chip, blueberry, and banana cinnamon. I haven’t tested any of them, but the different mixes won't affect how the bread bakes.
Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. I like to cover individual slices with saran wrap before adding to the freezer so I can pull one out and heat in the microwave whenever I'm craving just a slice.
An 8x4 baking pan will result in a thicker, denser, low sugar pumpkin bread (my suggestion), while a 9x5 will be slightly more crumbly since the batter is spread a bit thinner and can bake more thoroughly. Either will work!
