These Raspberry Rice Krispie Treats are soft and chewy with fresh raspberry flavor. These are a Valentine’s Day inspired treat with a fun fruity and chocolate mix!

About these Rice Krispies

Homemade Rice Krispie Treats are a go-to snack because they’re easy, delicious, and crowd-pleasing. This recipe takes the classic treat to a new level with the addition of dried raspberries and a luscious dark chocolate perfect for Valentine’s Day.

Whether you have a significant other or not, these Raspberry Rice Krispie Treats make for an easy dessert for two or solo. And while they’re perfect for Valentine’s Day (along with these Champagne Strawberries), they also make for a great any-day-of-the-week sweet treat. I mean chocolate + fruit is always a good idea!

I must let you know, before you commit to making these deeeelish krispie treats, fresh raspberries will not work. You’ll need freeze-dried raspberries for sure, I buy mine at Target!

Recipe Ingredients

  • Rice Krispies – The base of these cereal bars providing the perfect crisp texture.
  • Marshmallows – I prefer mini marshmallows because they soften and melt better. Plus they’re better for sprinkling overtop if desired
  • Freeze Dried Raspberries – These are important because fresh raspberries will not work! They would be too moist for the krispies and make them soggy. I get my freeze dried raspberries from Target for best price + quality.
  • Chocolate – No valentines day treat would be complete without chocolate! You can use milk chocolate or dark, whatever you prefer.

Substitutions and Variations

I’m such a fan of the raspberry-chocolate combo but these Rice Krispies can be made in so many other ways! Get creative with flavor combos and what’s in your pantry to make your own version.

  • Use Cocoa Krispies to make these into double chocolate treats.
  • If you can’t find mini marshmallows feel free to use regular sized, they might just take longer to melt down. You could also use different flavored marshmallows if you can find them!
  • Instead of freeze dried raspberries try swapping for different freeze dried fruits like strawberries or blueberries.
  • These milk chocolate chips are my favorite but you could also use white chocolate, dark chocolate, or butterscotch chips.
  • Add in extra flavor + textures with chopped nuts, cacao nibs, or candies like these UnReal  chocolate gems or another favorite candy bar.
  • Drizzle peanut butter (or any nut/seed butter) overtop the bars before chilling for more richness.

How to Make This Recipe

Step 1. In a sauce pan, melt butter and marshmallows on low; stirring constantly.

Step 2. Stir in rice krispies then mix together with a wooden spoon.

Step 3. Once combined, add freeze-dried raspberries. Add in 1/4 cup of the dark chocolate.

Step 4. Pour the Rice Krispies mix into a greased or parchment lined baking dish and spread to the edges of the pan.

Step 5. Melt the remaining chocolate in the microwave in 30 second intervals, stirring between each. Drizzle the melted chocolate over top and sprinkle with extra raspberries.

Step 6. Chill in the fridge for 20-30 minutes. Then slice and enjoy!

Recipe FAQs

How do you store them?

I prefer to store them in the refrigerator, but the counter is also fine. They keep for up to 5 days. These freeze well too! These cookies are also great to give as a gift, bring into the office on Valentine’s day, or to take over to someone’s house.

Why is my chocolate so stiff after melting?

It’s likely your chocolate has burned or “seized.” This is why you need to stir between each interval and avoid heating more than needed (I have found three 30 second intervals does the trick). However, if you catch the burning chocolate early enough, you may be able to save it by whisking in a tablespoon of water and mixing gently in an attempt to loosen the seized clumps.

Any tips for success?

Do not press the rice krispies hard into the pan. This’ll create much too dense of a texture. You want the marshmallow and cereal mixture to create a web so they’re not too hard when you eat them.

Equipment

  • 6 Quart Sauce Pot
  • Measuring Cups
  • Wooden Spoon
  • 9 inch pie dish or 8×8 square pan

Ingredients

  • 4 cups Rice Krispies
  • 1 bag mini marshmallows, 10oz
  • ½ cup freeze dried raspberries*, not fresh!
  • ½ cup dark or milk chocolate, divided
  • 4 tablespoons unsalted butter

Notes

    1. Hi Donna!! That sounds like a great idea. I haven’t tested with Arrowhead Mills Puffed Cereal, but I assume that if it still has a similarly crispy/crunchy factor, it should work. Keep me posted if it works 🙂
