About this Ceviche

So what is Ceviche?

Ceviche is originally a Peruvian dish of raw fish marinated in some sort of citrus (typically lemon or lime) mixed with a variety of other ingredients often including peppers, onions, and spices.

Ceviche is also commonly referred to as cebiche or seviche, so if you see those spellings, they’re all talking about the same dish.

There is so much to love about ceviche and this Avocado Shrimp Ceviche highlights these things. It’s simple and quick to come together. Like, seriously only 10 minutes.

Plus, can we talk about a perfect medley of flavors! All of the ingredients in this ceviche salad develop into one another when you add the lime juice and seasoning – it’s wonderful!

It’s also super refreshing and healthy (low carb, high protein, healthy fats) making it perfect to serve as a light summer dish. It’s also super colorful which makes it a beautiful dish to add to your table scape.

Not your typical ceviche

This Avocado Shrimp Ceviche uses cooked shrimp, which I know is non-traditional, but it works, stays fresher longer, and takes away the stress of having to worry if your fish is safe to eat.

The marinade that “cooks” traditional ceviche does not guarantee all of the bacteria is killed and this method also requires extremely fresh fish. I’d rather not dabble with food safety, but instead I will keep this Avocado Shrimp Ceviche perfectly delicious with cooked shrimp:)

Recipe Ingredients

  • Shrimp – The star seafood of our ceviche! I used frozen, cooked, tail-on peeled & deveine. As mentioned, I know that’s not the traditional ‘ceviche’ way, but it works.
  • Cilantro – Fresh herbs brighten this dish in color and taste. If you’re not a cilantro fan, sub parsley.
  • Chile Lime Seasoning – Is there anything Trader Joe’s Seasonings can’t do?! You can also grab on Amazon if you don’t live near a Trader Joe’s, or use regular chili powder.
  • Minced Ginger – Has a slightly pepper, spicy, very pungent taste to round out the ceviche.

How to Make This Recipe

Step 1. First prepare the shrimp. This will be dependent on the type of shrimp you buy. I used cooked, tail-off & deveined (efficient). I quickly thawed the frozen shrimp in a strainer with luke-warm water for 5-8 minutes. If you’re using raw shrimp, cook over the skillet for 2-3 minutes per side until they’ve reached a light pink color.

Step 2. Then, wash and chop the produce: Finely dice avocados, red pepper, red onion, and cilantro (tip: use a pizza cutter to quickly dice herbs). Add them to a large mixing bowl.

Step 3. Add shrimp, seasonings, minced ginger, and juiced limes to the mixing bowl.

Step 4. Toss everything together. Serve the Avocado Shrimp Ceviche immediately. Best served chilled.

How to serve Avocado Shrimp Ceviche Salad

This ceviche is super versatile and can be served in a variety of ways. 

  • With chips! Serve it as a dip with tortilla chips. I like to make fresh homemade chips by putting a flour tortilla under the broiler for a couple of minutes until crisp. 
  • On protein!  Put this ceviche on top of chicken, steak, tofu, mahi mahi, salmon to name a few.
  • In a taco! Make this ceviche for your next taco night. Add to hard or soft shell tacos and top with some sour cream!
  • On top of salad! Spoon this ceviche over a bed of arugula or mixed greens for a flavorful salad. 
  • With a spoon! This Avocado Shrimp Ceviche is tasty all on its own. Dive in and enjoy by the spoonful.  

Recipe FAQs

Are there any tips for success?

Dice all of your ingredients VERY finely. One of the best parts about ceviche is how all of the flavors marinate together, but this won’t happen if any one component is in larger chunks.

How can I tell if my shrimp are finished cooking?

The beauty of using precooked shrimp, you know they’re cooked! If you plan to cook raw shrimp, however, you can tell they’re cooked through when the “J” shaped raw shrimp has formed a “C” shape. If you’re shrimp is “O” shaped you’ve overcooked it.

Is ceviche healthy?

Yes! This Avocado Shrimp Ceviche Salad is very healthy. It’s low carb, super high in protein thanks to the shrimp, and full of healthy fat from the avocado. It’s also dairy free and gluten free!

How should I store ceviche? Does it freeze well?

Store in the refrigerator for up to 3 days. If you’re planning to prepare this the night before serving, keep avocados in original condition and add to the shrimp ceviche mixture immediately before serving.
I don’t recommend freezing your Avocado Shrimp Ceviche Salad. These ingredients are best fresh and will not thaw well

    This is such a refreshing recipe. I ate it as a dip with tortilla chips and it turned from an appetizer to dinner when I just about finished the whole bowl
