The Viral TikTok Lasagna Soup has taken the internet by storm with its innovative twist on the classic Italian dish, combining the flavors of lasagna in a comforting, hearty soup form.

Plus, it is an easy preparation and delicious blend of pasta, cheese, tomatoes, and Italian seasonings simmered together to create a delectable bowl of comfort.

Viral Lasagna Soup Recipe

Lasagna is such a classic comfort meal, but in all honesty, I don’t love the laborious process. Enter the viral Tik Tok lasagna soup recipe. It is SO simple to make and just as delicious as the real deal to fulfill that lasagna craving. Tiktoker @dannylovespasta posted a version that got close to 6 million views, and although I’m not sure he can be deemed the ‘creator’ of this trend, he sure did make an impact and so many viral lasagna soup variations have been made since then so here is mine. 

Sautéed onions and garlic with lean ground beef provide intense savory flavors to this soup. The liquid base is a combination of beef broth and tomato sauce for a rich and hearty soup. 

And while we’re on the topic of ‘viral’, of course I had to add cottage cheese to the mix too. This provides that creamy component you get in the classic ricotta component of typical lasagna. Same goes for the base of this Unstuffed Shells recipe with a luscious cheesy base!

Recipe Inspiration

I’m a sucker for classic comfort food (aren’t we all!), and I’ve been meaning to develop a lasagna recipe on the blog. When I am avoiding shooting a new recipe, it usually means I don’t truly think my readers will make it/it won’t ‘perform well’.

However, when I saw this lasagna soup recipe I made it ASAP during the craziest time of year for me when I had so much else on my plate… an indicator that you MUST make this!!!

Lasagna Soup Ingredients

  • Ground Beef – I used 93% lean ground beef. You could use ground turkey or ground chicken if you prefer.
  • Italian seasoning – Keep the seasoning simple. Italian spices, salt, and pepper.
  • Beef Broth –  You can use chicken broth, too, but I like the richer flavor the beef broth brings.
  • Marinara Sauce – I like Rao’s.
  • Lasagna Noodles – Gluten Free if needed.
  • Cottage Cheese – Mimics the ricotta in regular lasagna, but provides extra protein!
  • Shredded Mozzarella Cheese – Fresh mozzarella can be difficult to shred, but I find it mixes into the soup better with a silkier texture as compared to the pre-shredded kind.

Substitutions and Variations

  • Noodles: Feel free to use regular noodles instead of lasagna. Whatever you have in your pantry can work! 
  • Meat: Instead of beef, you can use ground chicken or ground turkey. Or make it vegetarian with crumbled tempeh mixed in for a similar texture. 
  • Cheese: Substitute in what you have. Use ricotta instead of cottage cheese. Gruyère or white cheddar in place of the parmesan or mozzarella. Whatever is your favorite will work!  
  • Veggies: Add some extra veggies! Sauté zucchini to add, or roasted eggplant mixed in would be tasty, too. Greens also go well in this soup. Add spinach or kale when you add the noodles so it gets wilted down.

How to Make This Recipe

1. In a large sauce pot/dutch oven, heat to medium heat. Add olive oil and heat until fragrant. Add the diced white onion and garlic, sauté for 3-4 minutes.

2. Add ground beef and mix together. Cook for 4-6 minutes.

3. Pour in seasonings and tomato paste. Spread throughout and allow the beef to cook.

4. Stir in the beef broth, pasta sauce, water and diced tomatoes. Break the lasagna noodles in half to ensure they’re covered with liquid. Cover the pot and let boil for 12-15 minutes **depending on what lasagna noodles are used will vary depending on cook time.

5. Stir in cheeses (parmesan, mozzarella, cottage cheese).

6. Add spinach. Wait a few minutes until spinach wilts. Serve warm with a fresh dollop of ricotta cheese and basil. Enjoy!

Recipe FAQs

How do we store it? 

Store your soup in an airtight container for 3-4 days. I suggest using glass over plastic tupperware as the tomato base will stain the plastic containers.

How can I prevent my noodles from clumping together?

If you throw all the noodles into the pot at once, it is likely they will stick together in a large clump, especially because lasagna noodles are so large. I suggest adding them one at a time in different areas of the pot to ensure they stay separated.

What is the difference between ricotta and cottage cheese?

Ricotta is smoother and creamier compared to cottage cheese. Ricotta is made by reheating the whey leftover from the production of other cheeses such as mozzarella; whereas cottage cheese is made by curdling milk with an acidic component like vinegar or lemon juice. Ricotta is milder and sweeter in taste, while cottage cheese has an obvious tang. 

I like cottage cheese in this soup recipe because it has almost double the protein that ricotta does. That said, you can easily substitute in a dollop of ricotta cheese for the cottage cheese the recipe calls for.

Serving suggestions

If you like a little heat, add a sprinkle of red chili flakes on top. Serve your lasagne soup with a simple Tossed Green Salad and a slice of garlic bread, Cheesy Monkey Bread or my homemade Pesto Focaccia. Make an Italian cocktail like this Rosé Aperol Spritz or Italian Margarita to go with your soup for a fancy yet easy date night meal.

Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3-4 cloves garlic, minced
  • 1 lbs lean ground beef
  • 1.5 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 jar marinara sauce, Rao's (24 oz)
  • 1 can diced tomatoes (juices included), 14.5 oz
  • 1/4 cup water
  • 10 oz lasagna noodles
  • 1 ½ cups cottage cheese
  • 1/2 cup shaved parmesan
  • 1/2 cup shredded mozzarella cheese
  • 1 cup spinach, chopped

Garnish (optional)

  • 1/2 cup cottage cheese
  • 2 tbsp chopped basil

Notes

Once you add the pasta noodles, be sure to give the soup a stir every so often so they don’t stick together. Especially because lasagna noodles are so large, you’ll end up with a huge clump if you forget to do this.

    This soup makes a BIG batch! Very easy to make and came together in under an hour. I didn’t have lasagna noodles so I swapped in Trader Joe’s Mafalda noodles which almost look like mini lasagna noodles anyways. 10/10 recipe!

    It was delicious and was such an easy dinner the only thing was that I didn’t see the note and didn’t stir when I put the lasagna sheets in so some stuck to the bottom of the pot but overall was amazing

    Made this several times. I use ground turkey and Farfelle noodles. Other than that I follow the recipe. Love it!
