Have you ever had anything wrapped in crescent dough that tasted bad? Because I sure haven't! So now I want you to imagine bacon and asparagus wrapped in crescent dough, baked, and sprinkled with cheese...it's the most EPIC appetizer I've ever had!
This Asparagus in Puff Pastry with Bacon appetizer is so amazingly delicious. I love the crispy bacon, hearty asparagus, buttery croissant, and melted cheese. Just thinking about it makes me DROOL! And they're so easy to make! Minimal effort required.
Enjoy these savory bites for breakfast with your coffee or as an appetizer to your holiday meal. I highly recommend baking them right before people come over. The smell will bring EVERYBODY to the kitchen the moment they walk in the door to see what smells so good! What host doesn't love that? 😜

Recipe Ingredients
- Puff Pastry or Crescent Dough: Pre-made dough makes this recipe easy peasy. I used a pack of frozen Pillsbury brand croissants. If you use puff pastry, your rolls will be flakier
- Olive Oil: For flavor and also to keep our ingredients from sticking!
- Cheese: I used both gouda and parmesan. The gouda gets a better melt and the parm adds extra cheesiness. Have fun with the cheese, though. If you have a favorite, insert here!
- Asparagus: You only need a small bushel. We'll be using 3-4 pieces per croissant.
- Bacon: You want to use THIN cut bacon here. It can be either turkey or pork.

How to Make This Recipe
1. First, let's make the bacon. Preheat your oven to 400°F and place a wire rack on top of a baking sheet. Then, lay slices of bacon on top and bake for 18-20 minutes. We want the bacon to be a little underdone so we can still shape it.
2. While the bacon is cooking, shred cheese if not already pre-shredded. Wash, dry, and trim the ends of the asparagus, then slice each piece in half. Dry well because excess water will make the dough soggy.
3. When bacon is done, remove the slices with tongs and pat grease off with a paper towel.
4. Next, roll raw crescent dough out onto a creased baking sheet. Then, use a knife to cut along the perforated lines in the dough.
5. Brush lightly with olive oil and sprinkle with salt and pepper. Then add one piece of cooked bacon onto each crescent in a diagonal fashion to fit the long direction of the dough.
6. Then add two halves of asparagus stalks in the same direction as the bacon. If your asparagus is thinner, you can use 3-4 pieces.
7. Then add shredded cheese on top. This will act as glue and help the crescent rolls stay together as they bake.
7. Wrap the exposed corners inward, forming a pastry pocket with the cheese, asparagus, and bacon tucked inside. Brush each piece of crescent dough with a little more olive oil. Then, sprinkle with more cheese and seasoning on top.
8. Bake for 12 minutes or until the pastry is golden and puffed. Enjoy!
Recipe FAQs
There is no right way to roll these. There is NO RIGHT WAY. If the bacon is too large or the asparagus is oddly shaped, just roll them like a rolling pin together. The important part is that the crescent rolls don't burn.
Yes. The ends of the asparagus are very woody and fibrous. Regardless of how fresh your asparagus is, the tips will not get tender when baked and you’ll end up with a very chewy, unpleasant bite. You only need to cut about an inch of the asparagus. TIP: If you make your own broth, save the tips! They're a great addition to your stock
Easily! Just leave out the bacon. The asparagus and gouda cheese combo is delicious. I would maybe add an extra stalk or two to bulk up the inside, but nothing else special needs to be done to make this recipe vegetarian friendly
These are best fresh, however you can store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for 15 second intervals until it’s warm, but note you'll lose some of it's flakiness. If you want to make these before your gathering, I’d recommend baking them RIGHT before it’s time to serve.
