I promise these Rotisserie Chicken Hawaiian Sliders will be the first dish to go amongst your game day spread. Hawaiian rolls meet rotisserie chicken and melted pepper jack with spicy mayo… I mean 🤤 This is a sandwich you don’t want to miss out on!

This is one of my post popular recipes on A Paige Of Positivity! It’s been rated 5 stars countless times and I hope you love it! The ‘secret‘ is the layer of sauces and textures. The flavor profile is simply unmatched. You’re going to LOVE them!

Mouthwatering Chicken Slider Recipe

Need a fun new recipe for the Super Bowl?! Game day or any day these Rotisserie Chicken Hawaiian Sliders come together with EASE and they also are just plain GOOD.

Nothing beats a tasty sandwich in my opinion. And they’re even delicious served chilled the next day (arguably better too). This recipe focuses on EASE. Just layer the ingredients and bake!

I came up with these sliders as a Super Bowl recipe because they’re extremely easy to make for a crowd (12 sliders in a single batch!), super easy to serve (just pull ‘em apart!), and they are a hand held finger-lickin’ snack. It’s a win-win-win situation.

The game day mains don’t stop here, try these Pulled BBQ Chicken Sliders, these Buffalo Chicken Sliders, these Mini Burgers on a Stick, Chicken Sloppy Joes, this Slow Cooker Pineapple Pulled Pork or this Dairy Free White Chicken Chili as other hearty options to add to your spread.

FEATURED COMMENT

“These sliders were a big hit at a recent get together with friends. So simple to make and everyone commented on how delicious they tasted. A go to recipe for sure!” – Peggy

Recipe Ingredients

rotisserie chicken Hawaiian sliders ingredients.
  • Hawaiian Rolls – Classic King’s Hawaiian Rolls will work great. They’re precut, ready to use, and just the perfect vessel to carry all the amazing sandwich fillings. I’ve also made these with Sara Lee Artesano Bakery Rolls, which are another great option.
  • Chicken – Pre-cooked rotisserie chicken keeps this recipe quick and simple.
  • Cheese – Pepper Jack tastes fabulous on these sliders, but you’re favorite cheese will also work (havarti is another great option!).
  • Spicy mayo – You can buy this or make it yourself with equal parts sriracha and regular mayo.
  • Pickles – Spicy, bread and butter, dill, sweet. Use your favorite.
  • Avocado – In the form of guacamole or sliced thin and creating great creaminess.

How to Make This Recipe

1. Preheat your oven to 350°F. Prepare the rotisserie chicken by removing all of the chicken from the bone and peeling off the skin. If you’d like an even quicker prep you can buy already disassembled rotisserie chicken.

Step 3

3. Spread the spicy mayo across the bottom of the buns (you can do this to the top bun, too if you really like mayo!).

4. Layer HALF of the cheese next. Try not to have too many pieces over lap. Tear pieces if needed to fit the size of the buns.

Step 5

5. Spread mashed avocado on top of the cheese in an even layer. You can instead use avocado slices or guacamole here, too.

Step 6

6. Then add the shredded rotisserie chicken to each bun (finely shredded chicken is better for equal coverage across the slider. So if you need to use your hands to separate the larger chunks at this point). Top with pickles and then the remaining cheese slices.

Step 7

7. Add any additional spicy mayo or sauce here if you’d like. Cover the with the top of the roll. In a small bowl, melt butter. Add poppyseeds and mustard to the bowl. Stir. Use a food brush to spread the butter mixture on the top of the rolls.

8. Cover your baking dish with tinfoil and bake for 20-25 minutes, when the cheese is nice and melty. Then, remove the tinfoil, and allow for another 3-5 minutes of baking to get a golden top on your sliders.

9. Serve hot — or chilled. You can sneak the fresh lettuce or coleslaw onto the buns after cooking for that good crunch factor.

Can you make chicken in the Ninja Foodi?

Absolutely! If you want to make freshly grilled chicken to use in this recipe instead of rotisserie, simply follow my post about Grilling The Best Chicken in a Ninja Foodi Grill. You’ll use the ‘Grill’ function to execute perfectly prepared chicken.

Other types of chicken to use

Other than fresh rotisserie chicken or skinless chicken breasts, you can use skinless chicken thighs or if you’re in a pinch, you can try using canned chicken.

If you decide to used canned chicken, drain the water from the can (using about 3-4 cans). Please use this method as the last resort…

PRO TIPS

The mustardy, buttery mixture that is made for the top of the rolls ties the recipe together! Try adding other seasonings like ranch or dill to the mixture to emphasize the gourmet flavor profile of these sliders.

Recipe FAQs

Do I have to use tinfoil?

YES. Please – otherwise your rolls will dry out and who likes stale bread? If you do not have tinfoil, you can use a lid to the casserole dish. Just ensure it’s oven safe.

Can I make these in advance?

If you’re making these on game day and want to prep ahead of time, assemble them in their pan and cover with tinfoil and store in the refrigerator (you can even do this the day before). Then before baking, brush the buns with butter and you’re good to go.

Are these good for meal prep?

I was surprised how good these were the next day. We stored them in the refrigerator and then ate them chilled. I think it’s because the spicy mayo is absorbed into the bread and the chicken. These are great to wrap individually in tinfoil and pack as school or work lunches.

How do you store them?

Store leftovers in the in the refrigerator wrapped in tinfoil. To reheat you can turn the oven to 300°F and pop the tinfoil wrapped sandwiches in for ~10 minutes until warm.

Serving suggestions

Ohhh, if these Hawaiian Roll Sliders are showing up at my party, I’m absolutely serving them with my Roasted Sweet Potato Fries and a pitcher of Limoncello Spritzes! There’s a good chance that I’ve also made my Healthy Turkey Chili for a spread like this!

Notes

You definitely need to cover your rolls before baking! Otherwise they will dry out and who likes stale bread? If you do not have tinfoil, you can use a lid to the casserole dish. Just ensure it’s oven safe.
Add cheese to both the top AND the bottom of the sliders. It’ll melt and act as the glue hold your sandwich together.
For DIY spicy mayo, it’s 2:1 ratio of mayo to sriracha. Tweak depending on your level of spice.

So quick and delicious! We made these for dinner one night and take them for lunch the next few days. Very customizable, we subbed Dijon mustard for the mayo, Swiss cheese and used traditional Hawaiian rolls. So good!

    1. Hi Anne, Depends on how long you’re making ahead. Personal preference is to prep them and then add the guacamole before heating in the oven for maximum freshness. Hope that helps. Enjoy!
