About this Dip
I love colorful foods, especially to serve to a crowd because we really do eat with our eyes first. And what’s more colorful than roasted beets that quite literally stain your cutting board and your hands with their deep purple hue.
Beets have a sweet, yet earthy taste, however, they often get somewhat of a bad wrap for tasting like dirt. This Roasted Beet Dip, though, couldn’t taste further from it.
Once roasted with cultured oil, the beets caramelize and become an absolutely delicious and soft vegetable. Blend it up with a citrusy lemon juice, creamy goat cheese and greek yogurt and you’ll create the dip you didn’t know you needed.

Recipe Ingredients
- Beets - I love pre-cooked ‘Love Beets’ in the refrigerator section. You can also roast your own in cultured oil.
- Zero Acre Cultured Oil - This smooth, neutral oil thins our dip.
- Greek Yogurt - This will make the dip super creamy and a little tangy. I like to use lemon yogurt for a bit of citrus, but plain yogurt will also do.
- Lemon - A little citrus pairs well with the sweetness of the beets.
- Honey Goat Cheese - Mimics the sweetness of the beets while also bringing in cheese as a savory element.
- Hot Honey - To keep on the theme of sweet and savory.

How to Make This Recipe
1. If you’re not using pre-cook beets, drizzle the beets with cultured oil, then wrap each in tin foil and roast for 50 minutes at 350°F. Allow them to cool, and peel prior to using (peeling after roasting and the skin should come right off).
2. Combine all ingredients into a food processor.
3. Pulse for 40-60 seconds until the beets are smooth and the goat cheese is well combined.
4. Serve with fresh vegetables, crackers, or with a protein. Enjoy!
Recipe FAQs
This Roasted Beet Dip is a tasty slate for a variety of toppings. Some suggestions include:
- Crumbled feta. This gives your Roasted Beet Dip a Greek theme.
- Toasted walnuts or pumpkin seeds.
- A drizzle of oil.
- Greek yogurt thinned with a bit of water so it can be drizzled over top (not only delicious but also a gorgeous contrast of the pink and white).
- Greens like chives, parsley, or green onion.
- Za’atar, which is a combination of dried herbs with toasted sesame seeds, dried sumac, salt, and often other spices. Trader Joe’s has a Za’atar spice blend if you’re looking for one!
You could also make this recipe with roasted carrots or sweet potatoes. Obviously you won’t get the same bright pink color you would with beets, but either would make a gorgeous orange dip, too.
This Roasted Beet Dip can be used in a similar fashion to how you would hummus. Some of my favorite ways to enjoy include:
- On veggies: Carrot sticks, celery, bell peppers, and cucumbers for dipping ar my fav.
With crackers
- On pita or flatbread
- Mixed into a greek salad
- On a sandwich

This dip is refreshing! I used a fruit flavored goat cheese and it gave it even more depth.
