S’mores meet cookie bar and this delicious S’mores Casserole recipe comes to life. A campfire inspired chocolate chip cookie dough layered with gooey marshmallow and Hershey’s pieces in the middle. There’s really no words for how good this is.

About this S'mores Dessert
I love warm chocolate chip cookies, and I love a gooey, golden campfire s’more and then I combined them together and OH.MY.GOODNESS. The indoor s'mores variation is pure goodness with no fire pit required.
This casserole starts with a cookie dough base that incorporates mini marshmallows and crushed graham crackers for the most perfect texture. A layer of that is followed by more marshmallows and pieces of Hershey’s chocolate squares that get sandwiched with a final layer of dough. When it’s baked, the melty chocolate marshmallow filling becomes sticky, gooey, and simply everything you want in a dessert.
These gooey oven s’mores bars are the perfect dessert to make for the next time you have a summer party or backyard barbecue, but I suggest making two because it will go fast! It's a fun way to enjoy the campfire classic without the open flames.

Recipe Ingredients
- Sugar - We'll use both brown and white for the perfect moisture and perfect rise.
- Eggs - You'll need 1 whole egg and 1 egg yolk. The extra yolk makes our cookie dough base super rich and moist.
- Flour - I used all purpose and have not tried any substitutes.
- Graham Cracker Crumbs - You'll need about 9 whole graham crackers for enough crumbs.
- Mini Marshmallows - For the cookie dough batter as well as the middle casserole layer. If you purchase large marshmallows (or regular-sized marshmallows), you'll want to cut them into fourths.
- Chocolate - We'll use semi-sweet chocolate chips in the dough and Hershey's milk chocolate bars in the center layer and on top.

Substitutions and Variations
- Instead of Hershey’s use Reese’s Peanut Butter Cups in the middle layer (one of my favorite ways to elevate classic s’mores too).
- Use marshmallow creme/marshmallow fluff instead of marshmallows in the middle for a silkier and less gooey filling.
- Elevate the entire casserole by spreading caramel, cream cheese or peanut butter on top of the first layer of cookie dough.
How to Make This Recipe
1. Preheat the oven to 350°F. Melt butter in a glass mixing bowl in 30 second intervals until melted. Add brown sugar and white sugar to the bowl and use an electric mixer to beat until everything is well combined.
2. Add in the egg+yolk and vanilla extract. Beat again.
3. Pour the all purpose flour, baking powder, salt, and ⅓ cup graham cracker crumbs to the batter. Mix again until cookie dough forms.
4. Add in ½ cup of mini marshmallows, chocolate chips, and fold together.
5. Grease an 8x8 square pan with spray oil or line with parchment paper. Layer ½ of the cookie dough into the bottom of the prepared pan. Break 1 Hershey’s bar into pieces and spread pieces in an even layer on the dough. Add the remaining ½ cup mini marshmallows and press them into the dough.
6. Add the remaining cookie dough on top of the chocolate/marshmallow layer. Then press the remaining ⅓ of graham crackers into the top. Bake for 22-25 minutes.
7. Remove from the oven and place the remaining Hershey’s Bar pieces onto the top while it’s still hot (they’ll get a little melty and it is DELISH).
8. Allow the casserole to cool before cutting into squares. Serve with a little vanilla ice cream or whipped cream if desired and enjoy!
Recipe FAQs
Store this casserole in an airtight container for up to 1 week. I prefer to keep it in the fridge, but the counter works, too. If you’d like to enjoy leftovers warm, you can reheat slices in the microwave or stick the entire pan back in the oven at 300°F for 5-10 minutes until you achieve a gooey melted chocolate filling.
Let cool slightly so everything ha time to set. Then using a sharp knife, make straight cuts into your cookie bars. You want to make sure you cut all the way through so the pieces don’t fall apart when you grab a slice. I like to transfer to serving plates with an offset cake/pie serving spatula.
Be sure to grease or line your baking dish! The marshmallow is quite sticky when it bakes and very difficult to get off of an un-greased pan.
Absolutely. When there's 1-2 minutes left of bake time, pull out your casserole, sprinkle marshmallows over the top and crank up the oven temperature to a broil. Return the baking dish to the oven for 30-60 seconds until the tops of the marshmallows are golden brown.
