Why is my chocolate not melting?
If your chocolate is stiff/chunky during the melting process it is likely it has burned or “seized.” This is why you need to stir it thoroughly between intervals and do not do more intervals than needed (I find three 30 second intervals is the prime amount of time) if using the microwave. If melting chocolate stove top, stir continuously. If you catch the burning chocolate early enough, you may be able to save it by whisking in a tablespoon of water and mixing gently in an attempt to loosen the seized clumps.
Semi sweet vs. milk chocolate. What’s the difference?
Semi sweet, by definition is darker due to its higher cocoa content and lack of milk. Semi-sweet chocolate is cocoa + sugar (and only sometimes milk). Milk chocolate on the other hand has a higher dairy content making it smoother and creamier.
What is the best cocoa powder for baking?
Hershey’s Special Dark Cocoa is my favorite. It’s super rich and smooth and the quality is spot on. The cocoa itself doesn’t have any sugar, so it highlights the chocolatey flavor. It also has a nice, fluffy texture that doesn’t chunk up, which is super ideal for baking and drink recipes alike.
