Ice cream for breakfast is a yes from me. This Mint Chocolate Smoothie tastes just like mint chip ice cream and has a smooth, creamy texture. The thing is, it’s actually loaded with healthier ingredients, plenty of protein, and some hidden veggies making it a delectable breakfast, post-workout snack, or lightened up dessert.

A Thin Mint Smoothie
I used to be afraid that using mint in sweet recipes would make them taste like toothpaste. But after some trial and error (plenty of error), that instead, adding mint mimics the flavor of a delicious peppermint pattie that I can not get enough of.
This Chocolate Mint Smoothie recipe includes fresh mint leaves, which give a brighter and more natural mint flavor. We also add in some chocolate chips for some texture just like in mint chip ice cream. If you want a more indulgent version of this flavor combo, check out these Andes Mint Brownies.
The green color is deceiving. Yes, I said this smoothie is healthy, but it does not taste like grass, which is always my fear with a bright green beverage. When spinach is blended with water, first and then all of the other ingredients are added, you truly won’t even know it’s in there, and instead you’ll feel as if you’re having mint chip ice cream in drinkable form.

Recipe Ingredients
- Spinach - Fresh or frozen will do. Spinach gives this smoothie its bright green color and adds plenty of vitamins and nutrients like fiber! We blend this with spinach so it's smooth and you cant even tell it's there. It's like a shamrock shake but with nutritional benefits!
- Mint Leaves - We are going to use fresh mint for this smoothie. It gives the smoothie a very natural and crisp minty flavor.
- Banana + Yogurt - Make our smoothie nice and creamy.
- Thin Mint Protein Powder- I use CleanSimpleEats (discount code: APOP saves you money!). You can use chocolate instead if you don’t have the specialty flavor, but the color of your Mint Chocolate Smoothie may not be so eye-appealing when the brown mixes with the green.
- Milk - I used vanilla plain unsweetened almond milk, but any non-dairy milk like oat milk, coconut milk, soy milk, or regular dairy milk are all fine.
- Mint Cookies - For that cookie crunch! Sub chocolate graham cracker if needed.

Substitutions & Variations
- More Minty - Add mint extract. Part of my job is to tell you how to make a good recipe. Well if you want a minty chocolate smoothie, add 1 DROP ONLY of peppermint extract. Anything more will make it inedible - literally. Your eyes will water the mint is so powerful.
- More Chocolatey - Add cocoa powder or or cacao powder for a stronger chocolate flavor, but do note, you’ll lose the bright green color that you’d get if you left it out.
- For Sweetness - If you like things a little sweeter, add a tablespoon of honey or maple syrup.
- For Thickness - Add a half an avocado! It will contribute to the green color and provide healthy fats.
How to Make This Recipe
1. Add the frozen spinach, mint leaves and filter water into a high-powered blender. Blend until the greens have completely liquified. This is crucial so there are no green chunks throughout the smoothie.
1. Add the remaining ingredients except the thin mints and blend until smooth. Depending on your desired consistency, you may need to add more or less almond milk.
3. Crumble the thin mint cookies last and pulse until evenly distributed. Pour into a glass (rimmed with chocolate optional), garnish with a scoop of creamy cool whip, thin mint cookie crumbles and/or cacao nibs. Enjoy!
Pro Tip
Always blend the leafy greens with water before adding anything else! It helps SO much with consistency and color of the smoothie. I use the same trick for this Spinach Mango Smoothie.
Recipe FAQs
You will need a high powered blender and then follow the recipe as is but don’t use any almond milk. This will thicken up the smoothie and make it more spoonable. It may take a little longer to blend thoroughly. Top with sliced banana, a smear of almond butter, chia seeds, etc.
Nope! Feel free to leave it out, but I like it to balance out the macros in this smoothie. If you choose to leave it out, I suggest adding 1-2 pitted medjool dates or another half of a frozen banana for extra sweetness.
If you’re feeling fancy and want to rim your glass in chocolate as I did in these smoothie photos, you’ll need a small dish with an edge, a handful of chocolate chips (I prefer dark chocolate here), and a splash of almond milk.
Place the chocolate in the dish, heat for 30 seconds in the microwave, add the splash of almond milk and stir until smooth. If there are still chunks of chocolate give it another 10-15 seconds in the microwave and stir again.
Then, roll the edge of your glass into the melted chocolate. I like to do this on a bit of an angle so it gets a bit further down the glass instead of just on the top edge of the rim. Place in the freezer for 5-10 minutes until chocolate is hardened then add your smoothie to the glass and enjoy!
