About these Burgers
This recipe combines Mexican and American cuisines into one delicious cheeseburger burrito. I like to think of it as Taco Bell meets McDonald's but homemade and MUCH healthier.
A Fajita Burger Wrap is such a fun way to shake up a classic burger and it’s packed (or wrapped) full of flavor. Pre-made fajita seasoning makes it easy to achieve that Mexican taste and plenty of fresh veggies including bell peppers, red onion, jalapeño, and cilantro make your wrap tasty and bright.
Add all of your favorite fajita or burger toppings and you've got yourself a delicious meal. I highly recommend dipping your in queso for a mouthwatering bite.

Recipe Ingredients
Fajita burger ingredients
- Ground Chicken - If you don't like chicken burgers, you can also use ground turkey or ground beef. Impossible ground 'meat' is also a solid option for those who don't eat animal products
- Veggies - In the burger we include bell peppers, red onion, jalapeño, and cilantro.
- Fajita Seasoning - A store bought seasoning packet makes this recipe so easy and packs SO much flavor.
- Cotija Cheese - This is a Mexican cheese similar to a mild feta.

- Tortilla Wrap - I used a spinach tortilla. You can use whatever type you'd like or make it a classic burger and use a bun!
- Toppings - I used queso, sour cream, salsa, lettuce, and additional bell peppers but feel free to add any of your favorite fajita or burger toppings! I think avocado or guacamole would also be great additions.

How to Make This Recipe
1. Start by preparing the ingredients. Finely wash and dice: red onions, bell peppers, jalapeños, and cilantro. Tip for dicing fresh herbs: use a pizza cutter! Then, in a mixing bowl, add ground chicken, bell peppers, red onion, jalapeno, and fajita seasoning mixture, cilantro, lime juice, and cotija cheese together.
2. Mix until ingredients are combined. Do not over mix or you'll end up with a tough burger. Then, heat a skillet to medium heat and spray with cooking spray. Use your hands to shape the burger into 4 equal sized patties.
3. Cook each burger for 5-6 minutes on each side. Prior to flipping the first time, feel free to add additional cotija cheese crumbles to the top of the uncooked burger. You’ll get a caramelized cheese after flipping and it’s SOOO good.
4. Once the burgers have reached an internal temperature of 160°F, remove them from the skillet. Get ready to assemble the wraps. Heat each wrap for 1-2 minutes on a clean skillet, just to get warm.
5. Spread queso and sour cream on the bottom of the wrap. Then add fresh diced bell peppers and shredded lettuce. Top with a cooked Fajita Burger sliced in half or quarters, layer any other condiments you’d like, and roll your burger burrito together.
If you’re making these into traditional burgers, grab some burger buns (I suggest brioche buns), top with lettuce, pickle, spicy mayo, bell pepper, and queso (and anything else you’d like) - and bite on in!
Recipe FAQs
Store the cooked burger patties in an airtight container in the refrigerator for 3-4 days. To reheat, simply microwave the burger in 30 second intervals until the internal temperature is hot. These burgers would also be great for meal prep or freezing!
I used a spinach tortilla simply because I like the green color. A regular tortilla or a lavash wrap would also work well. You can also serve on a classic hamburger bun or skip the bread all together and serve on a salad or on a lettuce wrap!
If you’re assembling your warp to be circular shaped (like a Taco Bell Crunch Wrap) it would be a good idea to grill it to keep it all together. If you’re assembling like a normal burrito, you can choose whether or not you’d like to grill the assembled wrap.
To do this, heat a skillet over medium-high heat, spray with plenty of cooking spray, and place your burrito seam side down on the pan. It should be nice and browned after just a couple of minutes and then you can turn it once to get the other side.
If you have one, you could put this wrap in a panini press for some nice grill marks. Be careful not to press down too hard and have your filling come oozing out.
If the wrap you're using is large enough, you can wrap the burger like a Taco Bell Crunch Wrap - radial shaped. Place all of the ingredients in the center and fold in the edges.
Alternatively, you can wrap your burger classic burrito style. I cut each burger patty in half and placed them each on a diagonal in the center of the wrap so there was more burger in each bite. Cut the wrap parallel to the burger cuts to avoid your filling from falling out.
To keep this recipe gluten free, just find a gluten free wrap. Also double check the fajita seasoning, as some brands sneak ingredients containing gluten in there. To make dairy free, skip the cheese or use a dairy free alternative!
