You'll love these Fluffernutter Rice Krispie Treats
Marshmallow and peanut butter just GO together. The Fluffernutter flavor dates back to 1918 in what they called “Liberty Sandwiches” popular in Massachusetts.
They were doing something right, because the combination is irresistable. Typically thick and sticky peanut butter met with the light and sweet flavor of fluffy marshmallows creates a delicacy like no other. Stir in some crispy, crunchy cereal and you’ve got yourself quite the no bake treat.
I really think you’re going to love these. I mean I am the undeclared queen of Rice Krisipe treats (ahhem, Lucky Charm Rice Krispies, Chocolate Raspberry Rice Krispie Treats, Candy Corn Rice Krispie Treats), and I knew I needed a go-to summer flavor! This Rice Krispie treat recipe is just 5 ingredients to make and just 10 minutes of prep, there’s no reason NOT to make them.
Recipe Ingredients
This crispy treats recipe has only a handful of simple ingredients.
- Butter - If you’re using unsalted butter, you’ll also want to add a pinch of salt.
- Mini Marshmallows - We will use one entire bag of marshmallows (regular . No measuring cup required.
- Rice Krispie Cereal - Off brand is just fine. You could also try Chex cereal or Cheerios.
- Marshmallow Fluff & Peanut Butter - We will swirl in for beautiful ribbons of texture and flavor through our treats.
See the recipe card below for a full list of ingredients and measurements.
Substitutions and Variations
- What’s better than marshmallow and peanut butter? ADD CHOCOLATE for a peanut butter cup vibe. A drizzle of melted chocolate to the top of these fluffernutter rice krispie treats would be wonderful, or stir in chocolate chips or make M&M Rice Krispie Treats.
- Want to make a PB&J version? Pulse 1 cup of freeze-dried strawberries, reduce the amount of cereal by a cup and turn it into a spin on peanut butter/jelly combo.
How to Make This Recipe
1. Heat a large pot to low heat. Add the regular butter and allow to soften. Pour in the marshmallows once butter starts melting.
2. Stir occasionally until marshmallows are a gooey consistency with the melted butter. Turn off heat, add rice krispie cereal and pinch of salt, and fold gently.
3. Spray a spoon with cooking spray and dollop 6 tablespoons of peanut butter and 6 tablespoons of marshmallow crème on top of the krispies.
4. Fold the krispies in 4-5 large strokes (we want there to be thick swirls, not completely mixed). Transfer it to a greased and parchment paper lined 9x13 large pan. Use a rubber spatula to spread the krispies out into the prepared pan. Top with the remaining 2 tablespoons of melted peanut butter in a drizzle.
5. Allow to cool for an hour-ish, or transfer to the fridge/freezer to expedite the process. Cut into 16 squares to enjoy!
Pro Tip
- Low Heat is Key: Melt the butter and marshmallows over low heat to prevent burning and to ensure a smooth, even texture for these gooey treats.
- Melt your peanut butter: It makes swirling so much easier!
- Spray the tablespoon with nonstick spray before scooping the peanut butter and marshmallow fluff. It will slide right off!
Recipe FAQs
Once cooled, wrap the individual cereal treats tightly in plastic wrap or store them in an airtight container for up to one week at room temperature or in the fridge. You can also freeze your rice krispie cereal treats in a freezer-safe container for up to 3 months.
Spraying a pizza cutter or large, sharp knife works great for cutting Rice Krispie treats. Be sure the bars are completely cooled and set before attempting to cut them.
A traditional fluffernutter is actually a sandwich. Peanut Butter and sticky marshmallow fluff slapped between white bread. The fluffernutter sandwich has been deemed the official state sandwich of Massachusetts, where marshmallow cream was invented.
These fluffernutter homemade rice krispie treats take on the same flavors but obviously without the bread.
The original recipe was done in a 9x13 inch pan, but a 9x9 baking pan should also be fine, just note you'll have thicker layers of treats. I would also only cut them into 9 pieces instead of 16.
Serving Suggestions
Serving these for a group? I like to cut parchment paper into squares and place the Rice Krispie Treats on them. It makes them easy to grab and prevents them from sticking together.
These are the best treat for a picnic for the whole family to love! Pack your basket with Turkey Apple Cheddar Sandwiches or these Mediterranean Pinwheels, some Ranch Snack Mix and enjoy your Marshmallow Fluff Rice Krispie Treats for dessert!
