Spring is coming and all I can do is sing I gotta pocket gotta pocket full of sunshine! ☀️
I decided to call this cocktail the Strawberry Sunshine Cocktail because it reminds me of the warmer weather. I can totally picture myself sipping it on a patio or rooftop and having a grand old time. It has flavors of fresh and crisp strawberries, sweet coconut, and cool mint—and it's so refreshing!
This cocktail features OLIPOP Sparkling Tonic. Have you tried OLIPOP yet? It's a healthier alternative to soda but you'd never taste it. It contains plant fiber, prebiotics, and botanicals to support your microbiome and digestive health. And it comes in some absolutely delicious flavors, like Strawberry Vanilla, which is what I used.
Other than that, you just need is some vodka, Malibu, lemon juice, fresh strawberries, and mint leaves! Then muddle, shake, stir, strain, and enjoy!
Ingredients for a Strawberry Mint Sunshine Cocktail
Vodka: Use whatever kind you like here, just make sure it's plain.
Malibu: I love the sweet coconut flavor!
Olipop: This is a healthier alternative to soda. I used the Strawberry Vanilla flavor. It's so tasty!
Lemon Juice: The sweet citrus flavor brings all of our ingredients together.
Strawberries: I used some fresh strawberries for garnish and to muddle in the glass.
Mint Leaves: The perfect topping to this delicious cocktail. Sweetness and mint pair so well together.
Tools you'll need
To make a Strawberry Mint Sunshine Cocktail, you will need a cocktail glass, handheld juicer, jigger (used to measure ounces of alcohol), muddler, cocktail stirrer, cocktail shaker and strainer, cutting board, and a knife.
How to Make This Strawberry Mint Sunshine Cocktail
- Fill a cocktail glass with ice. Set aside.
- Next, add finely diced strawberries, mint, lemon juice, and vodka and Malibu to a cocktail shaker.
- Muddle for 30-60 seconds or until the strawberries have completely broken down and the mint is fragrant. Then, strain the mixture in the cocktail glass over ice.
- Top off the cocktail with Strawberry Vanilla Olipop. Then, garnish with more strawberries and mint. I also salted the rim. Dress it up however you'd like!

Questions and answers
How should I store this cocktail?
I don’t recommend storing this cocktail because of the carbonation. If left to sit, it will turn flat. Yuck!
I don't have access to OLIPOP. What else can I use?
You could use a strawberry lemonade. Snapple has a VERY delicious Strawberry Kiwi product that would SHINE in this cocktail! You could also use a sparkling strawberry flavored or coconut water with strawberry bitters. There are a lot ways to achieve the strawberry flavor if you don’t have OLIPOP.
Can I use something else besides vodka?
You can use tequila or gin instead of vodka if you’d like. The Malibu is sweet so you can play mixologist a bit and add in what you love to drink!
